I saw the thermometer in the back of your wood fired oven, what's it rated up to? I haven't seen any that was rated for more than 600 degrees fahrenheit
what was that spike in the side of the pork? Was it a wireless probe?
Do you have to top the wood up during cooks like this? Also how long did the pork take?
Yes, I keep adding small splits of wood to maintain a steady temperature of around 150’C - 300’F, and it takes between 2.5 - 3 hours.
