Tried cooking this for years until a Spanish Chef mentioned the salt … magic ingredient and changed the whole taste, wonderful. In Barcelona I have also had them with a hint of Paprika. Love tapas and have your book !

Where can I get a terracotta pot like that?
I would had used what we call cayena (another type of chile, a smaller one) instead of the mexican chile ancho but looks good and authentic anyways, it gives it another carachter, your own one

Hey if you visit Spain clay pots a dirt cheap here. They can be sold in "mercadillos" (Encants in Barcelona, for instance) or in any big supermarket (Alcampo, Carrefour). This may sound tacky but they just resell traditional pots from Spanish industries. You may need to soak them for a few hours before the first use.

Ever thought that perhaps the prawns had already been deveined? Usually, if it's been deshelled, it has its veins pulled out.
