I Can't Stop Making This Strawberry Pop Tart

  • This strawberry pop tart is so delicate, flaky, tasty and much better than store bought. You can make the filling, the crust the day before and assemble and bake when you want to serve.
    You will need:
    Pie crust,
    300 g all purpose flour/ 2 1/2 cups
    1/2 tsp salt
    2 tbsp sugar
    226 g very cold unsalted butter
    1/4 cup icy cold water
    For the filling:
    I made 1 pound of strawberries but you’ll only need half of this amount for this recipe.
    1 pound strawberries, green leaves removed, washed and dried
    2 tbsp corn starch
    1/2 cup sugar or your favorite sweetener
    1 tsp vanilla extract/ optional
    For the glaze:
    1 cup powdered sugar
    1/4 cup of milk or cream
    1 tbsp of the strawberry filling
    For the egg wash:
    1 egg
    1/2 tbsp water or milk
    Sprinkles to serve.
    Preparation:
    Make the filling first. Wash and dry the strawberries then blend with the vanilla, sugar and cornstarch. Strain all the mixture and cook over medium heat until it boils and thickens. Refrigerate for 2 hours or overnight. Make the pie crust, add the dry ingredients together, mix and grate the very cold butter on top of the flour. I place the butter in the freezer for at least an hour before grating. Try to incorporate the butter very lightly until you have a sandy texture. Add the cold water and for a ball. It will barely come together. Flatten, wrap in plastic wrap and place in the fridge for an hour. Make the glaze by mixing the powdered sugar and milk until smooth, add 1 tbsp of the cooled strawberry filling and mix. Make sure to add the milk slowly, you don’t want the glaze to be very soupy. Use additional flour to roll the dough, roll into a thin layer, cut into 3x 4 inches. Make some holes on both top and bottom layers of the pie crust. Add 1 tbsp of the filling in the center and spread avoiding the edges. Add the top layer and secure with a fork. Brush with an egg wash and bake at 350 degrees F for 20-25 minutes. Wait for the pop tart to cool completely before adding the glaze and sprinkles.

      The dough will make 6-7 good size pop tarts. You can make them smaller if you like.
