I've Never really understood this method of laying bricks. Stonemason generally put the cement on the bottom and sides of each brick and press them into place filling all gaps, and then removing access squeeze out. Going back and trying to fill between gap seems laborious and inefficient.
That all depends on the person. I see this method quite often. As with almost any building method, there are advantages and disadvantages to any approach.

It could be for production value that someone else does most of the work and she is filmed doing some of the work. She does seem like a very hard worker, but I question where is her man? Maybe he is doing most of the work and she is getting the credit for it. She does have the little boy and unless her name is Mary she had to have someone fertilize her egg.

It’s apparent she uses this platform, so if she wants to know an easier way to do something after she had been told there’s easier ways it’s on her to want to learn how. What do you want? I’m just telling her there’s an easier, better, faster way to lay block.

I think the ditches may be used to redirect water when it rains, to avoid flooding and erosion near the buildings.
