1. You can use bacon or pancetta but originally it's made with Guanciale
2. You can add cream but originally it's made without cream
3. You can add a little leek or garlic or onion but origianlly it's done without it
4. You can use parmesan but originally it's done with pecorino
5. You can use any pasta you want but originally it's done with spaghetti (oni ini idgaf)
Basically it tastes slightly better with cream if you don't have super good eggs. Stop being so square about it, Italian cooking is simple because of the amazing ingredients available in Italy. At it's core Italian cooking is all about simplicity, flexibility and freshness.

Yeah all these muthafucken Italians charging people for 1st degree murder for using cream are so full of themselves! Eggs don't get the job done you can taste the nasty egg whites especially if you just taken the eggs out of the refrigerator.
Basically in cooking like anything do what the fuck you want. You'll be the one to taste it after all and your taste is unique.
Bullshit. You can add those variations but it won't be carbonara. Bacon for christ sake!

There's a very cool trick in there which I will use in future. Gennaro controls the heat which cooks out the egg by putting the sauté pan on top of the pasta pot. Neat.
Perfect recipe for the perfect dish. My favorite dish ever. Also nice using original recipe so hopefully no angry Romans complaining "OH IT'S NOT ORIGINAL RECIPE" lol

Davide Forcellini mayonaise the idea makes me want to vomit :P Maybe I will go to Italian butcher and try to make this with some guanciale, it is not easy to find in food markets here.

This dish is so fast to cook and one of my favourite pasta recipes. Forget all that other carbonara shit with milk or cream inside.
Muddymarry exactly! often times I see the chefs in chic cafes in my country abusing the cream or milk into this dish.
I only make it this way I can't stand the cream. My sister is much worse she will buy a cheese sauce and just mix it with pasta and Lardons and call it carbonara she don't know what's she's missing
carbonara in the philippines are loaded with milk or cream and mostly of them loves it.

I have followed Gennaro's receipe and got rewarded by high five from my daughter. Gennaro, those are your high five. I have a few comment's for the channel and Gennaro :
The balance between olive oil and egg yolk is important so that the meal will not appear 'oily' so go low on the oil.
The receipe allows for twists, today I will use dashed chorizo instead of pancetta. I will not call it Carbonara.
During summer, we have been to Jamie's Italian in Moscow, they have Penne Carbonara on the menu. My daughter took it as I had done it according to receipe (but with spaghetti) at home few weeks before. I am not italian and I just follow Gennaro's videos (or Jamie's) but I was told that Carbonara is spaghetti and nothing else. The comment on the mix between oil and yolk comes from that visit, maybe in a hurry they overlooked it. I have checked Jamie's Italian in Covent Garden and they have the expected Spaghetti Carbonara. Maybe Gennaro will fly to Moscow soon.
It is really as Gennaro is saying, the taste is so good ! I guarantee you will, never again, buy Carbonara sauce in superstores.

Its interesting isn't it? It is because many audio books and other English learning tools in Europe use British English for their base, creating a faux British accent with it.
It is similar to how many Spanish classes in America teach the original Spanish dialects, making it less useful in Mexico and Latin America.

+victor sels Make sure you turn of the gas before mixing the egg mixture with pasta, though. Otherwise you're going to end up with spaghetti scramble eggs instead of Carbonara.

Every time I watch these different kind of cheese in the groceries, so many questions behind my mind, how the Italian' s or perhaps people in Europe love using different kind of cheese in their recipes. This is a wonderfully simple yet delicious dish. I always made it following the recipe of Antonio Carluccio since it's the one that made me fall in love with it. I also use spaghettoni instead of spaghetti and omit the garlic but no matter which version you choose you will not be disappointed. Just for the love of food don't add cream and don't be afraid of raw eggs since they get their fair share of heat from the pasta and bacon grease.
