- Ginataang Bilo-bilo is a sweet, rich and decadent dessert soup filled with lots of goodies. It is made with coconut milk (coconut cream) and a variety of different fruits and tubers. My version contains small tapioca pearls ,plantain bananas, sweet potato and jackfruit.
Bilo-bilo is super easy to make. Rice balls are made with glutinous rice flour and simply mixing it with water to form it into a dough. I added pandan flavor with half of my dough and the remaining half is just a plain one.
You will need:
For the Rice Balls:
2 Cups Glutinous Flour
1 cup Water
2 drops of Buko pandan flavor extract
2 drops of green food coloring
For the creamy Ginataan:
2-3 cups water
2 400ml Can coconut milk or cream
3/4 cup sugar
2 big sweet potatoes--peeled and cubed
4 pcs.plantain bananas--peeled and cubed
1 cup jackfruit--cut into strips
1 1/2 cup Tapioca pearls
NOTES:
While cooking, you may need to add more water if it is getting too thick.
