    I never heard of it as a acid wash but then not all places do things the same. The plant I worked , after leaving the vacuum machine the meat went through a tunnel of very hot steam which cleaned the outside and tightened the plastic. It was always know to me that that discolouration was when it was too hot in the tunnel. I find that some plants are worse than others with this issue on the beef.

      Thank you. My old boss told me that years ago and it could be wrong. It seems like it really only happens to certain cuts like brisket for some odd reason. Thank you for letting me know.

      You can check with any grocery store. They might have to special order it and it won't be cheap.
