Badam burfi is a rich and healthy sweet recipe made of almond, ghee and sugar. This tantalizing almond barfi can be prepared for any festival
Almonds - 2 cups
sugar - 1 1/2 cup
Ghee - 2 tbsp
Saffron strands - 10-12
Method
- Soak almonds in hot water for and hour and then peel off the almond skin.
- Pat dry the almonds with a napkin.
- Grind the almonds into a fine powder.
- add some saffron strands into sugar water
- In a saucepan add sugar and water and keep stirring until the sugar dissolves.
- Once it comes to boil check the consistency of sugar syrup.
- Once it is come to one string consistency add the almond powder and mix everything properly
- Add ghee and cardamom powder
- Once the almond mixture stops sticking the pan, turn off the flame
- Remove it immediately in a greased plate
- Spread it on to a tray with the help of a steel bowl which is greased with ghee.
- Garnish it with saffron strands, dab them down.
- Before the barfi cools down completely cut it down into square pieces.
- Let the baurfi set for at least half an hour
- Flip it over and un mold it.
- Almond Burfi is ready to be served.

Extra virgin olive oil is the best option
Thank you, you can use plant based ghee that is available in online markets
@@RahilasCookhouse we don't prefer plant based ghee as they are all hydrogenated hence has transfat. We use coconut oil.
Sunflower, canola or corn oil can be the best options. Olive oil and coconut oil have strong flavour which is not suitable for sweets in my opinion.
