    ►RECIPE
    2oz Empress 1908 Gin or other pea blossom infused spirit
    8 fresh mint leaves
    3 - 1 inch cube pineapple chunks
    muddle
    then add
    1oz of fresh lime juice
    1oz simple syrup
    shake with ice
    stir gin with ice
    Pour gin to single rocks glass with ice, set aside to chill. In mixing tin add mint leaves and muddle. Then add pineapple and muddle. Then add the simple syrup and lime juice, add ice and shake. Double strain contents of tin into rocks glass and say "Goodbye blue sky"

    Is there a way to make this without the alcohol? I have a friend that doesnt drink but her S/O does.

      It's probably best with a non-alcoholic spirit such as Seedlip Garden 108 or another gin like alternative. You could also sub in an equal amount tonic water to simulate the Gin. As for the color changing effect, you'll need to get some butterfly pea powder. The rest should be good
