    Sometimes regional Snacks gain international recognition thanks to a fictitious screen character like the Fafda Jalebi! Fafda Jalebi is a popular Gujarati breakfast combination. It has become immensely popular thanks to the character of Jetha Lal from ‘Tarak Mehta ka Ulta Chashma’, a popular TV Comedy soap where he is always eager to get Fafda Jalebi for breakfast!
    Fafda is also served with a raw papaya chutney called Sambaryo. But as a pairing, I feel Fafda Jalebi is the best combination of Sweet & Salty. There is also a tradition of eating Fafda Jalebi on the festival of Dussehra.
    I have shared over here the authentic way to make Fafda but the Jalebi recipe is an Instant Jalebi that requires no presoaking of the batter.

    Recipe :
    Fafda
    Preparation time: 15-20 minutes
    Cooking time: 20-25 minutes
    Serves: 3-4 people
    Dough
    Ingredients:
    2 cups besan (gram flour)
    1 tsp papad khar (sodium benzoate) / baking soda
    1 tsp asafoetida
    6 tbsp water
    1 tsp salt
    1 tsp carom seeds
    2-3 tbsp oil
    OIL to fry
    Method:
    Sieve the gram flour into a large bowl & add salt, carom seeds & oil, mix well by rubbing it well.
    In a bowl add the papad khar, asafoetida, 4tbsp water & mix well to dissolve the papad khar.
    Add the papad khar & asafoetida mixture to the flour & mix well. Knead the dough adding more water as required until it comes together, you have to make a semi soft dough.
    Add a few teaspoons of oil & knead until you have a non sticky, stretchy dough.
    To fry fafda, heat oil in a flat-bottomed vessel until it is moderately hot.
    Take a lemon sized ball of the dough & roll it into a thick cylinder.
    Place the dough cylinder lengthwise on a wooden board & using the base of the palm spread the dough in one direction to flatten it out.
    Use a knife to peel away the fafda. Fry the fafda in the oil until the fafda cooks from both the sides, it takes only a few minutes.
    Remove the fafda from the oil.
    Sambharo
    Preparation Time: 20 minutes
    Cooking time: 5 minutes
    Serves: 5-6
    Ingredients:
    2 cups grated raw papaya
    1 tbsp oil
    1 tsp mustard seeds
    1 tbsp chopped green chilies
    2-3 red chilies
    1 sprig curry leaves
    Salt to taste
    ½ tsp turmeric powder
    2 tsp sugar
    1 tbsp lemon juice
    Method:
    Heat oil in a pan. add the mustard seeds and allow to splutter. Add the green chilies, broken red chilies, curry leaves and sauté till fragrant. Add the grated papaya, salt to taste turmeric powder and mix well. Cook for 3-4 minutes. Remove from fire. Add the sugar, lemon juice and mix well.
    Instant Jalebi
    Prep time: 10-15 minutes
    Cooking time: 20-25 minutes
    Serves: 6-8 people
    Batter
    Ingredients:
    1 cup flour
    4 tbsp yoghurt
    1 tsp baking powder
    A few drops lemon yellow colour
    2 cups sugar
    2 cups water
    Oil/ ghee to fry
    Method:
    To make the syrup, bring to boil the sugar and the water in a pan. reduce to a simmer and cook further for 7-8 minutes till you have a syrup of 1 string consistency.
    Remove from heat.
    Mix together the flour, yoghurt, lemon colour in a bowl. Add sufficient water, a little at a time, to make a smooth batter of coating consistency. Add the baking powder and mix well. Set aside for 2 minutes.
    Heat 1” ghee or oil in a flat pan.
    Fill the batter in a piping bag and pipe out spirals to make the jalebis.
    Once crisp from one side, flip and crisp from the other side too. Cook till the bubbling is almost stopped.
    Remove from the ghee and soak the jalebis in lukewarm syrup for 1 minute. Remove and serve hot.
