What a tease to not give amounts (Na'an bread) without buying your book.
Can't find an answer but why not submerge the meat with liquid entirely when braising? Other professional chef friends I've asked completely cover when braising for more even cooking (liquid transfers heats better) and more even texture. So I would surmise that leaving a little exposed creates a slightly different texture on top?

I must say, for the first time ever, you totally missed the best way to do beefcheek. I cook this all the time. There are much better ways to do the beef cheek, look to the mexican recipes for a better way.
