Mate if you have probs spreading the jam just microwave it for 30sec bursts till it softens right up but before it turns to hot syrup hahaha..it really does help.

My mother used to make this (her name was Patricia, too, but she was known as Paddy). Because of the way the coconut lay on top we nicknames it 'hairy bun' which soon became 'hairy bum'. We loved it and it was an infrequent favourite.

Tried to make these and I failed need the right size tin everything was twice as thick due to small pan and tasted like mouthfuls of coconut hahaha
this is yummy too if ya put lemon spread (curd) on instead of the jam ..i heat the lemon spread in a small pot and pour it on cos im lazy

@@aussiegirlcancook Thanks AG. I can remember as a kid watching grandma putting it all together. But started it a couple of months before soaking the fruit in brandy and stirring it once a week. The table used to groan when she started cooking for xmas.
Legend recipe, thank you. I beat the jam with a fork and it loosens for an easier spread. Also chocolate bits on the jam layer then the coconut topping and this goes next level 👍 or if you wanted fancy you could melt and drizzle chocolate over the top. Yum
