My late grandfather used to use an old outhouse they cleaned up, to smoke their sausage. He burned Applewood in a barrel just like you used and then used straw.

I smiled every time you opened that door. Have you by chance tried an apple and cherry wood smoke? Most of my meats I smoke is with cherry wood but never tried it with sausage much less combined with apple.
Andre, Thanks for getting on board with us. I'll try to add the smokehouse in the next sausage video. It's pretty simple. It's a stud wall 4ft x 8 ft with roof. It's actually a skinning shed/smoke house 2 in . We can skin deer and hogs under the shed in concrete slab. You can step off the slab right up into the smoke house. This one is just plywood walls. You want a few air gaps, but most have batting insulation stuck in them. My Dad built this one in the 90's. He'd smoke hams, sausage, bacon and all that good stuff in it. I mostly smoke sausage, but have smoked bacon and hams!!
If you process your own meats it's great. Just make sure to get your fire off the floor and insulate it with sand in the bucket like I did. It's not bad to build. Just stud wall box. If your not smoking a ton you could probably build it smaller, but mine is nice. That was over 200 lbs of sausage we smoked
@@andrepatterson7058 probably be worth building a nice 4x8 then. That way you can store your dry wood in one end. Just put you some wood screw hooks in the ceiling, the heavy ones. I hang all my meat with cotton string

I have not, but bet it's good. Are you using cherry you buy or like wild cherry?
