  • Jefferson is a village in the county seat of Ashtabula County, Ohio. Jefferson was officially founded by Gideon Granger U.S. Post Master General during Thomas Jefferson's administration, in 1803. The first courthouse in Jefferson was built in 1798 and was a simple log cabin where the current courthouse now stands. It was torn down in 1807 and a new building was completed in 1809. In 1870 the present courthouse construction began and was completed in 1874. The Jefferson Diner is a staple in the community, the Jefferson diner was first established in 1941 by C.W. Hutchenson as a 24 hour diner known as "Jefferson Diner Car". The diner was described as a old train dining car. The Jefferson Diner has great history and great food.
