- Today we bust out the Onlyfire Outdoor Santa Maria Attachment for the Weber Kettle. I decided on tri-tip for my first cook to break it in. Were going with a couple of my favorite beef rubs. You can save 10% by using code Doc10 at checkout. I picked up these beautiful tri-tips at Costco. I didn't trim them up one bit at all. Just patted them dry and put the rubs on going heavy.
Lets talk a bit here about set up. I understand that true Santa Maria style cooking would be with all wood. Red Oak if you're a purist. At this point I don't have cost effective access to cooking wood. With my limited cooking wood supply I'm trying new things and setups. This first one involves a full chimney of lump charcoal and adding wood. I will have other setups in future cooks to attempt to find out what works best for me. One thing I did find is closing off the bottom vents really helps with fuel consumption. The double charcoal grates helps with big chunks falling through and bending your ash cleaning blades. Once upon a time I would light my charcoal with two Weber lighter cubes @MaddieandKiki use only one and they are the Weber experts. So now I just use one and it works just as well as using two. Let's get onto the cook. The first thing I am going to say is that it's a total blast to cook on. The second thing I will say is I need to have some more patience and just let it cook high over the flame. Kick back, relax and just enjoy the experience. At some point I would need to give it a sear, but I think on this cook I jumped the gun a bit. I definitely can say that there is no arguing with the end results.

Thank you. Still think I'm learning patience with this. Could have put some more smoke flavor if I would have taken my time a bit. Ended picking up a truck load of cherry wood from your neck of the woods last weekend. Should have a nice supply now to get me going.

I’ll probably do up a chicken this weekend on it. Don’t want to ruin a prime rib without some practice. Never know when I’ll screw something up. Probably be out in a couple weeks.

Excellent video, really well done. You asked for some tips, so here's mine. Most people who would use this type of grill attachment have previously smoked meats...usually around 225F. The way you check that temperature (apart from the thermometer) is to put your hand over the baffle. Same concept here...place your hand parallel to the meat and see if it is close to the 225F mark. If so, great. If not, lower or raise the grilling surface or adjust the amount of fuel in the grill. Once the meat is 30 degrees from preferred doneness, drop the surface down most of the way down for searing (one or two minutes per side maximum) and then take the meat off...let it rest (it will raise another ten degrees internally) and you will have awesome smoky meat, perfect temperature, and you've taken full advantage of an awesome grill accessory. (I'm not sponsored, just a huge fan).

Great job on it. Yea I love doing the open fire, its fun. I find with lump charcoal you have to have an unlit base or add more to it for a longer cook, but i don't care to do it with burquites so lump is the way to go.

Was good times there and you walked us through your thoughts throughout the process, that grate looked pretty clean and what bit was there, seems like an easy clean (was that the case)? Loved how the tunes come right in when you do your speed ups, keep up the fantastic job!
Very easy to clean. You will have a lot of fun with yours. Crack that baby out for some darts and q. 3 cooks on it so far. Not sure when they are coming out, but having a great time with it.

This is a super fun unit to cook on. I hope you enjoy it as much as I do. One thing I learned is that you don’t need to build monstrous fires in it. I also wouldn’t recommend using your prize 1984 designer Weber Kettle with it. I’ll get some more content out soon on this grill, but I just picked a kettle of Facebook marketplace for free that I’ll be using with mine.

I'm from Santa Maria. We use red oak. Turn the Tri Tip every 15 mins. 1 hour time. Prefect

Highly enjoyable to cook on. There’s different brands and qualities of units on the market. I used it as a test if I would one day want to get a full size Santa Maria grill.
Poking that meat with that pointed turner is a no no. Tongs are the answer. No holes till done is the rule.

Does the original Weber kettle grill grate fit on this?
The Weber grates are slightly smaller. My answer would be kind of. You could use the OF grate as a base and put the Weber grates on top.
Do you find that the Santa maria attachment gets high enough?
I do. I’ve built some fires that were to big for the unit. With the right size fire it goes plenty high enough.

I’m delighted to say that this is just about the worst “over fire” cooking I have ever seen. Grateful, as I truly am, for the opportunity to ridicule you, I do have to wonder what on earth possessed you to so willingly share it dear boy? High flames applied directly to thick cut, red meat are not, and will never be, your grilling friends.
