He's not wrong about staff. I'm a manager at my job, the more people you have, the more potentially bad employees you have to deal with. Productivity, attendance, attitudes, all that, the worst part for me. I hate that drama side. Having to have conversations about doing wtf your told. Stop standing around and talking on the phone, disappear for 30 minutes "I was in the bathroom", etc. If I opened a business, I'd do what he did. Just need 2 good people and that's it
You need to be able to pay those two good employees well enough to be there and do the work of multiple people though.
Can’t ask them to do a hand full of task then pay them half of what they deserve.
America has a real problem with that in today work force.

@@SAUCE206 And my job doesn't. I work for a large retailer. Got a store manager that goes after people for whatever reason. One of them was one of my employees. He's great, knows how to do everything. She decided she wanted him "out of the building" He's a friend, so I warned him. He's now transferring to another store. I'm down another employee. He'll be replaced with someone terrible, I'm sure, if at all. But the same amount of work will be expected. When it doesn't get done, because obviously, she'll come down on me. I'll be out the door shortly after

That's the way to do it, a few high quality items. There is a pizza shop by me that has over 120 menu items, including quesadillas, pierogis and fish & chips. LOL

Garlic breath has a super cool retro vibe and fantastic pizza! There are only two tables, so you may want to call ahead if you're planning on dining in.

I like the old school simple menu pizza shop but the only item i would add (even the old school do it too) is a calzone or rolls and it could be filled with whatever toppings go on the pizza plus mozzarella cheese. Nothing needed to be bought its all the ingredients that's already there.
I'm sure you can find that at other pizza shops. Keep it simple
@@MoonmanSpacejam It doesn't get simpler than that. You can also do garlic knots or garlic rolls with excess dough. Just add garlic to the dough and bake. Zero waste.
ive been saying this long time... keep it simple, do it well... you will make people happy and keep coming back... the only reason that i would maybe say to be little more diverse, is have just a regular salad, and then another salad.. and dessert.. have one chocolate item, one non chocolate non caffiene , just as u have soda u have coke and sprite and possibly lemonade or tea or fruit punch/juice ... and its pizza so its kid friendly no need for chicken tenders or any other !
I wonder what the power usage is on those electric ovens running all day.
Salad addition would be the only thing I would "add".

I always wondered if you can just throw in round pizza shaped dough in oven first,without any toppings,for five minutes.Then add toppings,and put back in oven,for extra crispy crust??

Honestly the toppings and cheese handle the cooking for long periods rather than the dough. You can ask most places for a well-done pie and they'll come back extra crunchy. Of course protein %/water %/fermentation all play a role as well, but there's no changing that!

Good Idea, How a pizza shop should be.. Simple Great Quality Flour pizza Crusts, Quality ingredients Of simple Toppings, Cheese and Sauce.... I taste many simple pizza places.. IT doesn't taste good. If you can't make a Good simple Cheese and Pepperoni pizzza.. forget about it!
yeah , this is the kind of pizza place I would go to. KISS! Keep is Simple Stupid.
I worked at a gas station for 5 years or so, and man people would come in and ask for pizza, nuggets, all this different crap. We barely sold hotdogs, and we eventually got a do it yourself milkshake machine, and the company would never restock it or my company was cheap and never paid for the restock, but I'd tell people where they could get X food or items. People are so used to having it there way, cause most companies don't want people going else where, so we end up with meh products. I'd rather go to a pizza place selling only pizza, and a taco shop that only sells tacos, etc.
there's a pizza place i love and 80% of my orders are always just cheese. there's just something about just tasting the flavor of the sauce with the cheese and the dough. other times it's pepperoni or mushrooms. that's it. no frills.
Wonder if he would make a calzone with just pepperoni and cheese with sauce on the side? A guy from Philadelphia opened a pizza shop locally several years ago. His calzone only had mozzarella and the toppings(fillings) you chose, usually pepperoni. That would be a simple item for him to add, especially for the lunch crowd.

Once that pizza sits flat it starts to steam the crust. Steamed crust=floppy crust. I like it crispy.

A 16 inch wood fire pizza cost $26 where I live. $17 is actually a decent price for a homemade, one shop pizza.

Simple is better. I hate a restaurant that has 15 20 30 items on their menu. You over working your employees physically, mentally and emotionally! Horn down what works and quit trying to be so and so down the block or what popping on social media
