Cooking Paella on the Kamado Joe.

- How I cook my version of paella on the Kamado Joe classic.
Ingredients
5 chicken thighs skin on, bone in.
10 shrimp peeled with head and tail left on
2 chorizo sausages sliced 5mm thick
4 fillets of firm white fish (I didn’t have any for the paella pictured but I usually put it in)
1 diced onion
1 red pepper cut into strips
5 chopped garlic cloves
250g Bomba rice
700ml of stock or water infused with a good pinch of saffron
1 Cup of peas or beans
2 grated tomatoes
10 stems of thyme
1/4 cup olive oil
Add the oil to a very hot paella pan. Brown the chorizo and chicken in the pan then remove them and set aside. I like how the chorizo flavours the oil. Then brown the shrimp for 30 second each side and remove. Brown the peppers and remove.
Add the onion, garlic, beans(if using peas add them at the end) tomatoes and thyme, fry until translucent. Add the rice evenly over the base of the pan.
Add all the ingredients you’ve browned (except the shrimp) and the fish back to the pan. I like to push the fish and chicken (skin side up) into the rice so they sit on the bottom of the pan not the rice.
Arrange everything so it looks nice, I think paella is a great looking dish so take some time create some paella art for your friends. Pour in the liquid. When the liquid is no longer visible add the prawns. Let the pan bubble away until the rice has absorbed all the liquid and started to brown and caramelise on the bottom of the pan.
Remove from the heat and cover with foil to rest for 5-10min. Serve with lemon wedges. - Zábava

There is never chorizo in Paella. This is a Spanish inspired rice dish, it is not paella.
