This is so wholesome. I'm trying this with blue butterfly pea tea in the brine to see if it dyes the radishes well. Rapunzel in Faerie Tale Theatre was my favorite thing ever as a kid and they had blue radishes.
I think the acidity will probably turn it pink. Butterfly Pea is very PH sensitive.

You can use turmeric powder for yellow colour, and mustard for little bit of spicy taste. If you want it red, then put some beetroot slices or juice in it.
@melancholyRequiem. Try making danmuji pickled radish using cape jasmine seeds (aka gardenia jasminoides) for the golden colour. A good substitute is tumeric.
