Baked Zucchini and Tomato Mozzarella (side dish) Submitted by Nancy
2 cloves Garlic
½ medium Onion (I like red onions)
3-4 Small zucchini
15 Cherry or Grape tomatoes (Cut in ¼ or 1 Large tomato)
1 cup shredded Mozzarella Cheese
1 tbsp. Olive oil
Salt and Pepper to taste (optional)
Directions:
1. Preheat oven to 350 F
2. Dice garlic, onion, zucchini and tomato
3. Grease a nonstick skillet with olive oil place over medium heat.
4. Sauté zucchini, tomatoes garlic and onions until veggies are tender.
5. Reduce heat to low and simmer for 5 minutes.
6. Transfer Veggie to baking dish. (I use a 9x13 so every bite has cheese)
7. Top with cheese
Bake for 10-15 minutes until cheese is melted and slightly brown.

They all look wonderful can't wait to try them helpful hint and easy way to cut a bunch of small Tomatoes at the same time it to take a deli lid put it down on the counter fill it with the tomatoes put another deli lid upside-down press down on the top lid and run your knife through them all to cut them in half at one time

The BLT pasta salad looks INCREDIBLE!
I've been making deviled egg potatp salad for years. Don't think I've made the regular stuff since I first tried this.
It's just as good with elbow macaroni, or even the butterfly looking pasta if you want to get really fancy.
I always get so excited when you post new videos, especially new sides! I am so beyond excited to try the baked bean casserole! That’s the one we are going to try first! Thanks for the new recipes!!!

The salad toss reminds me of when I was a new flight attendant. I was working in first class and we had these huge bowls of salad that we had to toss & plate in the aisle. The large spoons slipped in my hands; the right spoon flipped salad into the face of the passenger seated on the left side and the left spoon flipped salad into the face of the passenger seated on the right. Simultaneously! 😂🤣😂
... So many Mandy meals and dishes to try .... Put each on a card ,, toss 'em in a bowl .. pick out one or two a week for something new to try ... Thank You for sharing your gems ...

We make a Greek style orzo salad very similar to yours. Only differences are that we add a diced green bell pepper, and instead of vinegar, use lemon juice. Perfect cool side dish in summer, with grilled chicken! Love your videos, thank you!
Baked bean casserole is #1 on my list to try. If I ever find anything as good as your green beans though, I’ll be very surprised.

Frozen corn niblets would be good in the zucchini casserole. I make something similar, but the zucchini, tomatoes and white onion is cooked in a lil bit of water. Then I add corn, salt n pepper. When veggies are tender I add a 8 oz block of jack cheese cubed up to the pot, cover and let the cheese melt on low heat. When I serve it I top it with homemade salsa.

I make that baked bean casserole, but I use my crock pot and cook it all on low especially when we are having a bbq or people over, that way I can keep it warm and they can help themselves. My husband requested it on Sunday for dinner, he LOVES it. That orzo salad looks amazing, I'll have to give it a try. Thanks for sharing more awesome recipes.

Have have a similar recipe for baked bean casserole but I’m trying this one. Never put crumbled bacon on top, that looks great. Also cannot stand the smell or flavor of green pepper but I know they will be fine for others without. Loved these side recipes ❤️👍🏼
For the zucchini side, I do the same, but add grilled chicken and it is a meal!
We make the beef and pork and beans almost exactly and then add canned biscuits on top when the biscuits are about browned we add shredded cheddar on top of the biscuits and cook til melted then serve.

Thank you for these great recipes. I will defiantly be making the orzo salad. We have been married 25 years this week and I have not made Orzo since we were first married. I made it, but we had a super cheap strainer and all the orzo got so stuck that I had to throw the strainer out. I bought a package of orzo last week and my husband even laughed about never having it in our house.
We always make Trisha's baked beans for all our gatherings and they're a hit. They're very sweet so I've been cutting back the brown sugar.
I make cowboy beans every 4th also. I use the exact ingredients but I use a lot more beans. The baked zucchini looks really good

Hi there, Lady. Glad to see a Tuesday video!! Yummy side dish ideas! My family also has a baked zucchini dish that is a bit different. Here is our recipe...
A delicious and easy recipe...
Cheesy Zucchini Bake
2 or 3 zucchini, sliced into circles and halved
1 med red or vidalia onion, sliced into thin rings
2 cloves of fresh
garlic, minced
2 fresh tomatoes, thinly quartered
Salt and Pepper
2 Tbls butter and 1 Tbls Olive Oil
Freshly Grated Parmesan Cheese
Preheat oven to 350º. Place all ingredients in a 8x8 glass casserole. Stir together and sprinkle with fresh parmesan. Cover with alum. foil and bake for about 30 min and then, uncover. Bake 15 min more or until veggies are tender.

That’s pretty much the potato salad I make it I add diced bell pepper and spring onion, sweet salad cubes and always red potatoes colorful salad oh and I use
Miracle whip rather than mayo. But only in salads. I’m a duke gurl for everything else!

I make the orzo Mediterranean salad a lot. I have never put ground beef in my baked beans, so I will probably try that one!
Your boiled eggs cooked nicely. I may have to get myself one of those cookers! The auntie mono’s seasoning is very similar to Paula Dean’s house seasoning that I make myself. It’s garlic powder, salt and pepper. I always have it on hand bc I use it often.
I also make a baked bean casserole the same except I use pan sausage instead of ground beef. But I do like it with ground beef as well. Thanks for the inspiration. That orzo salad looks fantastic. I just love most summer salads especially pasta salads. But I’m trying that orzo salad.
Another version of Zucchini is the same ingredients as yours but add fresh corn. So good.
Love side salads during the summer especially. These look great to try. I usually like to throw in some type of pasta where I can.
