I think if you’re going to decorate the basement in vintage mid mod you should leave the paneling as is but if you’re going more modern with your design you should probably paint. Looks like such a fun area to fix up!!

I love the concrete floors in the basement. You can add color/stain to concrete, I’m sure there are videos out there. I also don’t mind the paneling, definitely fits the era of the home. You could try painting the panels black or dark dark green (almost black). I think that would look good against the lighter brick color and make it more modern.
The wall of closets is a great idea.
Protein balls. Oats, banana, peanut butter. Chill in the fridge. Lots of recipes for alternate ingredients as well:

I actually like the wood paneling. If it was oiled, I bet it would be beautiful.
Both jackets are nice, but I think the navy goes better with the contrasting slacks.
