  • The best tomato and basil pasta dish you can make.
    During my food & travel trip in Italy I was introduced to a Michelin star Chef by the name of Peppe Guida. Peppe cooked for us a spaghetti which he blanched in water for only 4 minutes. The spaghetti then, continues to cook further inside the actual tomato sauce rendering a better pasta.

    What is the proper way to cook and store penne pasta for use the next few days?

      Once cooked in salted boiling water, drain, just toss it in a little olive oil, cool it down and cover it, place in the fridge.

    After you add the pasta to the sauce, are you cooking it at--what?-- medium heat for the remainder? Surely not boiling. Thanks.

    I have never tried this technique with the spaghetti only boiling in the salted water for only 4 minutes, i have boiled it a minute or two less than package directions, but we are usually talking in the eight minute range for al dente, i will give this a try and see how it turns out, ty.

      @@recipe30 I usually take out the spaghetti and add it to the sauce just before al dente but will try it earlier.... guess it adds a little more starch to the dish also 👍👍

    You didn't say at the end, if the 4 min. method worked less well than, just as well as or better than the traditional method.

      I made this yesterday, it was delicious! The only thing I did different was I kept the garlic chunks in......and I ate them!! Dragons breath, indeed! I'm a good witch!! 😜
