    Just to add to the egg advice - in the UK all Lion Brand eggs now come from hens that have been vaccinated against salmonella and are safe to eat even when not fully cooked.

    Hi Gemma, I just made this today. But after melting my choco, water & coffee it became liquidy, not like yours that's bit fluffy? I follow your exact recipe. So i got white specks of eggwhite when i mix together. Hoping for the better after 6 hours, it's still chilling in the fridge. 😌

    I tried to make it today, but I think my chocolate was still too warm when I mixed in the eggs, or the egg whites weren't fluffed enough, because it turned out a bit runnier than I would have liked :( I'm going to try to make some whipped cream and mix it all together to hopefully salvage the texture. It's still DELICIOUS, though! Thank you for the recipe!

      it looked liked she overcooked/melted the chocolate. It's one reason melting chocolate in the microwave can be tricky.

      No, Fjona. It was grand. Chocolate seizes up when you add small amount of water little by little. In my recipe, you add it all at once.

      You can use chickpea water, the one that comes in a can, use the water and whip it, it will whip up like egg whites

    I normally love all your recipes but you never mix water and chocolate. The chocolate was not even creamy, it got chunky and stiff. I think i will try this but i am not adding water to the chocolate

      Oh Okay, havent known that any religion does this. On a non religious Base, Eggs are vegetarian but not vegan. They Kind of belong to the same category as Butter or Milk. Its an animal product but clearly not the animal itself.

      The egg white meringue can be replaced with aquafaba (chickpea water). I suppose you can use whipped cream and gelatin (agar agar or any other plant-based alternative for vegetarians) to replace the egg yolks

    This takes much longer than ten minutes. The egg yolk is uncooked so heating the white defeates the object, as it's uncooked yolk that holds the most risk.
