The growling noise is the tips of the fan blades exceeding the speed of sound, around 761 mph, producing shockwaves. Power is reduced at cruise altitude and growling stops as blades slow slightly. In this clip tge pilot increases power for more altitude so transonic growling begins again.
I just always love the sudden moments the pilots put the throttle at full the you can feel yourself going at full speed.
