Delicious Middle Eastern Street Food: Vegetarian Falafel / Hummus / Salad Wraps by "Chick P" London.

  • ✓ We've just "discovered" this market stall going by the name "Chick P", they're serving up these gorgeous pure vegetarian wraps in Primrose Hill Saturday Market, London...........please be warned, these wraps are absolutely delicious !!!
    Unlike some well known (& lesser known) fast food restaurants and takeaways, there was no microwave or frozen food to be seen at this stall because thankfully everything is freshly prepared & cooked to order.
    What makes the wrap such a treat is that they freshly fry the falafels (when you place your order), so that it is served piping hot within a matter of minutes; where the outside of the falafel is delightfully golden & crispy and the inside is deliciously fluffy.
    There is no secret to the preparation because they make everything in full view of you.
    The filling includes: Homemade Hummus, Cucumber, Tomato, Hot Pickled Baby Chillies, Pickled Gherkin, Pickled Red & White Cabbage, Falafel.
    * Tahini (a sauce made with Sesame seeds, Salt, Lemon, Herbs & Spices).
    * Harissa Sauce (made with Chillies & Red Peppers).
    There is the option to add either (or all) of the following: Haloumi, Feta Cheese, Roasted Red Peppers (in a tangy olive oil dressing).
    (To anyone wondering if cheese should go into the wrap; the question is not one we would ask because all we want to know is if its delicious & the answer to that is a definite yes). Put simply this is delicious restaurant quality food; but at street food prices!!!
    Ordinarily they use either brown or white pita but on the day of our visit they were wrapping everything using plain tortilla type flatbreads (very similar to Indian roti or chapatti).
    The owner Ashley developed and perfected the Falafel recipe after he went traveling around in several Middle Eastern countries trying and tasting many versions of falafel along the way.
    The actual full recipe is a closely guarded secret but we are told that the:
    * Falafel is made using Coriander and Cumin (as well as a few more secret spices).
    * Homemade Humous is made using dried chickpeas (which have been soaked overnight & boiled down with lemon, garlic & salt).

    Soak chickpea's blend still hard with corriader lots of seasoning line little bit of water blend and shape paste for hummus same thing except cook the chickpea's and add tahini , FYI thetes no gluten or starch in chickpea's they are ancient grain

    He burnt the halloumi- it stuck to the cooking surface and he had to scrape it off probably due to your stupid questions. 'is their a secret to soaking chickpeas overnight?' Err.... I just put them in a bowl of water'.

      Yes. If soaking them over night is not working, use hot water for soaking it will do it within 30 mins but u have to cool them later in the fridge.

    Looks awsome, fresh and clean, much better then the middle east stands.
    I never tryed cheese with falafel, but try offering sliced hard boiled egg (i saw that
    in Ashkelon, Israel) if you charge 1 pound per egg thats a nice added
    income, also always offer 2 add-ons in most cases the costomer will choose at least one insted of saying no thanks, hope i helped a bit.

    Certainly not a traditional Falafel, at least by Lebanese standards. In fact almost all the stands you've frequented seem to be taking creative liberty to make something completely new. It's like putting ketchup on noodles and calling it 'spaghetti bolognese'.
    1) These stalls need to stop using cucumber, its over 90% water and dilutes the taste of the tahini (sesame seed) sauce and makes the falafel & bread mushy and unpleasant. Cucumber generally works only in cold sandwiches or if you combine it with yoghurt (like a Greek Tzatziki). The only exception is pickled cucumbers.
    2) Stop using pickled cabbage. It's not a donner kebab. Pickled cabbage has a slight bitter undertone with a vinegar taste which compliments grilled meat quite well, however falafels have an earthy & crunchy taste which gets overpowered by the bitterness creating uneven flavors. You only need to use Lebanese pickled radish or pickled cucumbers (in moderation).
    3) Never use lettuce - same reason as point '1' above. Lettuce tastes horrible when warm and has a very subtle earthy taste which when combined with the earthy taste of falafel becomes overwhelming. You wouldn't necessarily notice this when eating it but you'll very quickly start to feel bloated or full after a few bites.
    4) Don't drizzle the Tahini sauce, put a lot more! It's healthy and it's zestiness creates a perfect balance to the falafel.
    5) Parsley, Parsley, Parsley! You only need parsley, no lettuce, no cabbage, just parsley and tomatoes.
    A real Falafel sandwich tastes healthy, doesn't make you feel bloated and is so addictive that you want to have a second, third and a fourth. Search CZcams for "Falafel Sahyoun" to see what a real Falafel sandwich looks like. The ingredients may be simple but they blend perfectly to create a mouthwatering sandwich:
    - Pitta bread or Arabic bread
    - lots of parsley
    - Radish pickle or cucumber pickles
    - thick tahini sauce (texture should be similar to mayonnaise in terms of viscosity. If it's watery then whoever's in charge of your Falafel has zero clue.
    - Tomato slices
    - Mint (optional)

      Hi there,
      Thank you very much for your comment - I did have extras such as the halloumi & roasted red peppers which increased the price, for my order.
      Bear in mind also that this is in the heart of Primrose Hill (in Hampstead) where I would presume the overheads would be perhaps higher than Acton.
      I don't mind paying this sort of price because the quality & taste is spot on.
