this is amazing. in Argentina, which has a lot of Italian influence, you're taught to only use ripe pear shaped tomatoes for sauces, and will be usually looked down upon for using the kind in this video (which is supposed to be for salads and sandwiches). I really liked seeing that there's no need to be that strict and feel a lot more free to experiment in my kitchen now. thank you! 🍅❤️

Even better: burrata! It’s basically a mozzarella pouch filled with creamy cheese (literally bits of mozzarella shreds and cream, I think-sort of a cottage cheese texture, maybe). It’s AMAZING, if you’ve never tried it.
Recipe and ingredients: I'm just gonna eyeball it since it seems a lot like many other traditional Italian Pomodoro sauces! Ingredients: About two pounds og heirloom/large tomatoes 6-10 garlic cloves Fresh (buffalo) mozzarella Olive oil Basil can of anchovies pasta (from bronze molds) Make cross incisions in the tomatoes and blanch them in boiling water. Put into cold water and peel off skin + remove stem area. Chop into smaller pieces. Chop garlic into small pieces. Fry garlic and anchovies at medium heat in lots of oil/butter. After a few minutes (before the garlic starts to brown) add tomatoes to the pot and stir/squish until the sauce thickens and gets more consistency and the oils start to separate slightly. Add lots of grated hard cheese (typically parmagiano regiano or pecorino) to the sauce and stir. Also consider seasoning it in the same process. Try to cook your pasta so it's done (Al dente) around this time. But if your pasta is done too late, don't worry, just leave the sauce slightly boiling and condensing the flavors - you can always add the starchy pasta water to rehydrate the sauce. Turn in the pasta such that it's well coated in sauce. Plate pasta with mozzarella, basil, olive oil and possibly even grated hard cheese. Enjoy!

White anchovies are much milder but may be too mild for this dish. But, this pasta dish looks soooo good. That's a good recipe (maybe a bit too much garlic) my favourite way to make sugo al pomodoro is to make a soffritto of carrots, celery, onions and one small clove of garlic then add the tomatoes. I add the basil only at the end
