His chemical equation is incorrect
Sodium carbonate itself decomposes into carbon dioxide and sodium oxide. This is evidenced by just heating a sample of sodium carbonate and using a lit splint, which extinguishes upon entrance into the test tube
His equation should be 2NaHCO3 (s) --> 2CO2 (g) + H2O (g) + Na2O (s)
Although, the experiment's results do support his equation (given the calculations) .... odd from my perspective
The sodium oxide is only generated upon further, higher heating of sodium carbonate (above 850 C).
