  • Degi Mutanjan Recipe
    If you are making Degi Mutjan for the first time, then the easiest way to make it .
    After many requests here is a recipe for Degi Mutanjan (zarda)just like you see at weddings.

    Serves 5-6
    Recipe in English:
    Ingredients:
    -Badam (Almonds) peeled ½ Cup
    -Pista (Pistachios) ¼ Cup
    -Water as required
    -Water 3-4 tbs
    -Red food color ¼ tsp
    -Green food color ¼ tsp
    -Orange food color ¼ tsp
    -Chawal (Rice) Sella 750g (boiled with cardamom,star anise & salt)
    -Ghee ¼ Cup
    -water ¼ Cup
    Milk¼ Cup
    -Hari elaichi (Green cardamom) 3-4
    -Sugar 1 Cups or to taste
    -Kewra water 1 tbs
    -Khoya crumbled ¼ Cup
    -Cham cham
    -Badam (Almonds) peeled & sliced
    -Khoya
    Directions:
    -On a bowl,place strainer,add ,almonds,pistachios & wash thoroughly with water then strain & set aside.
    -In 3 bowls,add water,red food color,green food color,orange food color & mix well.
    -Add 1 tbs boiled rice in each bowl,mix well then strain & set aside.
    -In a pot,add ghee & let it melt.
    -Add green cardamom & mix well.
    -Add sugar & mix well.
    -Add milk,mix well & bring it to boil and cook on medium flame until sugar is dissolved (4-5 minutes).
    -Add boiled rice,mix well & cook on high flame until dries up (3-4 minutes) & keep mixing in between.
    -Now add stained red,green & orange colored rice then add washed & strained dry nuts.
    -Add kewra water,khoya & desiccated coconut.
    -Cover lid with kitchen cloth & steam cook on low flame for 10-15 minutes.
    -Garnish with cham cham,almonds,khoya & serve!
    Recipe in Urdu:
    Ajza:
    -Badam (Almonds) peeled 2 tbsp
    -Pista (Pistachios) 2 tbsp
    -Water as required
    -Red food color ¼ tsp
    -Green food color ¼ tsp
    -Orange food color ¼ tsp
    -Chawal (Rice) Sella 750g (boiled with cardamom,cloves,star anise & salt)
    -Ghee ¼ cup
    Water ¼ cup
    Milk ¼ cup
    -Hari elaichi (Green cardamom) 3-4
    -Sugar 1 Cups or to taste
    -Full Cream Milk 1 Cup
    -Kewra water ½ tbs
    -Khoya crumbled 200g
    -Cham cham
    -Badam (Almonds) peeled & sliced
    -Khoya
    Directions:
    -Bowl mein strainer rakh dein,tutti frutti,sukha nariyal,kishmish,badam aur pista dal dein aur pani sa ache tarhan dho lein phir strain ker ka side per rakh dein.
    -3 bowls mein pani,red food color,green food color aur orange food color dal ker ache tarhan mix ker lein.
    -Her bowl mein 1 tbs boiled chawal dal ker ache tarhan mix karein phir strain ker ka side per rakh dein.
    -Pot mein ghee dal ker melt ker dein.
    -Hari elaichi aur laung dal ker ache tarhan mix ker lein.
    -Cheeni dal ker ache tarhan mix karein.
    -Doodh dal ker ache tarhan mix karein aur ubal anay ka bad darmiyani ancch per cheeni ghul janay tak paka lein (4-5 minutes).
    -Boiled chawal dal ker ache tarhan mix karein phir tez ancch per sukh jana tak paka lein (3-4 minutes) aur bech bech mein chamcha chalatay rahein.
    -Ab strained red,green & orange colored chawal,washed & strained dry nuts dal dein.
    -Kewra water,khoya aur khopra dal dein.
    -Lid ko kitchen towel sa cover ker lein aur dhak ker halki ancch per 10-15 minutes kliya steam cook ker lein.
    -Cham cham,badam,pista,khoya sa garnish ker ka serve karein!
