What is the purpose of the keel extending aft to enclose the rudder? I can think of several reasons, but among them I might have missed the point altogether.
Edit. The main reason I can think of is the launch from a slipway and subsequent recovery process.

Hay Could you pop me an Email at frosb013@gmail.com and we can organise a meet up at some point to organise a works party for JHC, I have a couple of other individuals who are interested in helping out, at the moment I am primarily working on raising £9000 for an enclosure to protect her from the elements.
Now for the interesting facts about the cast iron keel, the rear part of the keel has three purposes.
      1) launch and recovery, there's a great big 6in pin inside the rear of the keel to alow her to be drawn up and down the slipway.
      2) it protects the rudder from being smashed into the ground if in shallow waters and when being beached or on a tidal birth.
      3) it also houses the counter and Stern post and reinforces the overall structure.
      4) it provides extra weight for when if ever, the vessel capsized it provided extra self-righting weight below the waterline.
      Cheers

Cheers, it's been four months in the planning stage but we finally achieved one of biggest most complex challenges our restoration project has faced in moving her 300+ miles to the new home.

Was this boat previously at Goodchild Marine in Burgh Castle, I’m sure I saw it there?

It was at Goodchild Marine for around 18 to 20 years abandoned at the back of their yard.

We moored up overnight at Burgh Castle last Wednesday and were having drinks at the Fishermans Inn, when we saw the boat going out on a low loader. We wondered if it was an old RNLI boat and that appears to be the case, WOW. Where is it now?

She had a four day ride on the truck that moved her from Goodchild Marine down too our friends yard near Sharpness Shipyard which is much closer to where I live, roughly 300+ mile move, this took the best part of four months of planning, permits, and a lot of overtime at work to raise the funds needed to move her.
It's great that you got to see her leaving Goodchild Marine, I unfortunately wasn't able to be there to film her being loaded and leaving their yard.
Please stay tuned as we are slowly constructing our boat shed to keep her in the dry and to alow us to proceed with her restoration.
