Yeah it’s definitely a growing along the way experience. Cooking inside is a skill and cooking outside is definitely a skill on its own also. Smoking is a great way to get lot of flavor. I would always lean towards less is more with slat because you can always add it with the Sauce after you pull the pork. Great work!

Yes, I’ve come to learn anytime I make pernil that it requires more salt than you think. It also helps if you season it and leave it in the fridge overnight.

Maybe Treagers have gotten better. Mine is 10 years old now. At the base P value the smoke setting with be 285 way above smoking. If I love the P value at all then I can't leave that for more than an hour without the fire going out. Their customer service has been pretty good though. I've had the try on the inside replaced twice and fire box replaced once because they rusted out. The hole thing is a rust bucket at this point but it chugs along. If they weren't so expensive I would get another one
