The reason the first two blocks kept disappearing was due to the fact that blocks up to 2 blocks above the obsidian platform you spawn on will be deleted once you enter/reenter the End to make sure you spawn safely.
So had he build the "staircase" from the edge of the platform, it would've remained?

There call Mesa AND there’s good because the mine shafts in mesas are all called gold mines, meting there is the same of gold in them as you would find iron in normal caves

Badlands are awesome lol, they have this tree areas (actually those are wooded badlands) and plenty of mineshaft chests in broad daylight, I even found lots of diamonds! Also all of those mineshaft make for excellent wood sources, so you aren’t running out of it anytime soon, also when you get a sword, you can gather the cobwebs to make a bed easily

Uhhh... since the floor was obsidian, he'd need 3 each for the sides, and 2 for the top. 8 minus the blocks on the floor.
If you really wanna be stingy you can dig down a block and build up the sides, saving you another two blocks!

I tested out this seed to see if he was cheating, but turns out there actually was a Notch apple in that chest. So he didn’t cheat!
Edit: and also i tested out the lighting nether portal with wood and lava, and it also works.
