As a former aviation engineer, I think the winch handle bolt is too short, it should protrude beyond the lock nut by at least two threads, otherwise the nylon lock will not work and it will work loose under vibration.
RE winch handle. the locking nut isn't fully on, i can se the nylon locking part isnt fully on the bolts threads if possible the put longer bolt one id do the or a thinner locking nut or even to thin regular nuts to lock against each other.
When you replace the flooring use Marine Ply - it’s meant for boats. For backing up buy some thin flexi pipes/ tubes about 4-5ft long and mount then on the trailer mudguards each side

Winch handle . you can buy Spring washers or shake proof washers or cut the nut you have in half using a Hack saw . dont use a power saw as it will melt the blue plastic in the nut , eye eye captain , Have you named you4r vessel yet ?? dude! 3/8 to 1/2 inch marine grade ply would have been more than enough to use for decks in the boat and will certainly take a few pounds off the over-all weight of the boat. that siad I love the look of the boat!
Weld a short pipe vertically in the middle of the back cross rail on the trailer. Stand an oar in it to see where the back of the trailer is while you're backing it up. Maybe the same set up on the transom for when the boat is on the trailer. I've done it - it's such a simple fix and makes it so easy to reverse
Many people already given advise on the winch handle, Clearly the bolt is too short, The thread lock is a good advise or drill and put a split pin to retain it. Or Butcher it and get Dad to put a blob of weld on it to hold it in place, that will be as good as your dads weld lol.
For others put PVC pipe sticking out in an angle so you can see the trailer. Then just remove them and put them in the bed. You can add flag pole holder to the fenders. Flag pole holders are adjustable. You can also just remove the tailgate. 🤷🏻♂️ whatever works.
The bolt that the handle attaches to is too short to engage with the nylon part of the nylock nut. You could use thread locking fluid instead (if you can't replace the bolt)
If you unplug your trailer lights before backing into the water at the boat ramp . You will not blow the bulbs out. A friend told me that and it works, so for.

put thread locker on the nut, will stop it coming lose or just grind that nut down from the back so the thread actually comes out the other side 2 or 3 turns
your handle keeps falling off you need a longer Bolt to make sure the bolt is tightened enough to ensure it sticks out of the nut so that the plastic insert bits in that's what it is there fore and as such should should stop it unscrewing.. Love the vids thank you.

most of the places I fish are smaller ponds and are electric only, so I figured there was no point in dragging it along with me! If I do go out on the river or something its really easy to just throw it on and go!

Drill the nut and stud through and insert split pin, not going anywhere with any type of nut.

Get some thread lock liquid for the trailer handle bolt, locktite or similar,
put thread locker on the nut, will stop it coming lose or just grind that nut down from the back so the thread actually comes out the other side 2 or 3 turns

No threads past the nut. Need at least two threads past the nut on the winch handle.
Get a longer bolt to go with that nylon nut so it protrudes past the end of the nut should fix your issue
How about putting a chain on the hitch handle and the trailer when it is not on the water, to save you losing another hitch handle.
Put locktite on the wench handle. if it comes off after that.. brother you got a haunted trailer

It's not a bolt one piece needs a thinner nut

The winch handle needs a bigger bolt cause the blue plastic in the nut needs to be on the threads of the bolt to stop it loosening 😉
