  • Izakaya are Japanese-style bars that serve a variety of small dishes to be eaten with the table while you drink. Like Japanese-style tapas! Here are my top five favorite Izakaya-style dishes and how to make them, including an edamame stir-fry, pickled eggplant, seasoned fries, a karaage dish and a filling simmered dish.

    Edamame Stir-Fry
    1 pack of edamame
    2 cloves of garlic
    1 tsp of chili flakes (optional)
    1 tbsp of oyster sauceCarrot
    Sesame seeds
    Pickled Eggplant (Nasu-dsuke)
    3-4 Japanese eggplant
    300ml water
    1 tsp of salt
    1 tbsp of myouban (alum pickle powder)
    Seasoned Fries
    1 bag (300g) of potato wedges
    ½ tsp of curry
    ½ tsp of garlic
    ½ tsp of parsley
    1 tsp of salt
    Ketchup
    Japanese mayo
    Nankotsu Karaage
    200g (7 oz) of nankotsu
    2 tbsp of soy sauce
    1 tbsp of sake
    1 tbsp of mirin
    2 tsp of sesame oil
    1 knob of ginger grated
    2-3 cloves of garlic grated
    2 tbsp of flour
    2 tbsp of starch
    1 liter (1.05 qt) of fry oil
    Gyu-suji Nikomi
    500g (1.1 lbs) beef tendons
    Tops of a green onion
    1 knob of ginger
    ⅓ of a daikon
    2 carrots
    1 block of konjac
    ½ cup (100 ml) of soy sauce
    50 ml each of sake, mirin
    2 tbsp of sugar
    2 tsp of dashi
    2 tbsp of miso
    Sliced green onions to top

    Pretty sure you should be adding the miso at the very end after cooking. Interesting things to make though.

      For soups, yes, that is good practice! For a nikomi like this, we want to get the flavor in the meat as it stews under pressure!
