I haven't even gotten to the end of your video, but I have to tell you - - I love how you teach cooking! You make me wish my mother had taught me like that. My husband and I went to a "world market" here in Atlanta today - there are quite a few of them here. And as always, I picked up little bits of foods I have never tried before. I have always wanted to try cactus! So I bought ONE leaf of nopales. hahaha. And I pulled up your video to find out what to do with it! : ] You peel and cook your vegetables a lot like I do. My pop used to make cactus for me quite a bit growing up, he would put it in 'steak a la Chicana' and I loved it. Haven't had any for over 20 years now but can't wait to try cooking with it now that I know how. Thanks for the great video, showed me everything I need to know.

I remember my mother sending me out to harvest the new growth pads from a patch that grew in our alleyway. She would clean, cook, and serve them. I cried at dinner time so I would not have to eat them. Ugggh. Then one day about a year ago I ate them at a Mexican restaurant thinking they were green beans. Ha! I ate them and loved them! Thank you posting a video on how to cook them. I cant wait to cook nopales. I wish she could see me eating them now! I'll cook some for my grandkids. I'm "SURE" they will love them! Ha! Just following this recipe, brought back childhood memories. Grandma Matilde at the ranch in Santa Teresa, Mexico gathered not only nopales to cook, but the fruit, prickly pears, we loved them. Thought the red fingers from the red fruit was neat!
my mom used to use a broom and brush the nopales on the grass.. she'd still have to wash and scrape the needles off. grilled nopal and fijoles. yum yum.

These are all over the place in the by the sea countryside in Greece. I'll pick some one of these days and try this recipe. Only I won't find green coriander... there isn't any in the market in Greece, only in Cyprus they know it and use it a lot. I will use some alternative herb and hope it works.

This is the best video I've found on making nopales. I have a jar of Doña María nopalitos(chopped up nopales), and the ingredients follow, mostly, what this video uses. The canned version uses one serrano, where this video uses red pepper flakes. And the commercial version has sodium benzoate as preservative. Otherwise, the ingredients used in the video are the same as the jarred version. ----------------------- The jarred version holds up quite nicely, which is important, as I only use it up slowly, mostly in omelets. I wonder if this home-made version would last as long in the frig as my store-bought version.

Great Video Eloise! I usually make my Nopales with Pork and Red Chile the way my Mom use to. I also like it cooked on a grill then in a tortilla with salt. I never had it with eggs, but my parents have. Thanks for sharing! There's a lot of people that don't know how to cook or what to make with them. The "slimy-ness" can be a feature when cooking a stew or a gumbo. Call it a "silky" texture. You'd have to use corn starch to get anything close to that. Still, some people don't like it.
I saw another vid which he combine the aloe and nopales cactus into one drinks..he even didn't took the thorns of those two but drained the juice with clothed to get rid of the thorns. And he mixed it with 2cups of freshly mixed orange juice..if you want to get the vitamins of that nopales cactus then don't threw the juice of it..

There are two types of nopales the female and male. The female cactus does not have any espinas or thorns. The younger or smaller the cactus leaves, the more tender they are. The larger the leaves the tougher they are. They are HANDS DOWN the easiest plant to grow. Just throw some on the ground and they will grow all by themselves.

if you soak them in lime juice for a few hours before cutting--they aren't slimy... and it gives them a great flavor... !
Or you can boil them with corn husk, that will also take the slim away.

Instead peeling into a plastic bag use a paper bag or towel then compost the trimmings. They add a lot of nutrition to the soil as well as your diet
