after creating the surface (using the curves) will there be associativity so if i change a curve the surface changes too? (I see i can use CFD pivot on the surface)

Absolutely: the model stays interactive meaning moving any curve, the surfaces will adjust in real-time. You can see that on 0:52
What do you mean by CFD? I guess you're not talking about fluid dynamics😉
