If Bulma never existed, it would just be a _new_ character who takes her role if not another existing character, and events would either be _slightly_ altered if not _completely_ unchanged. That's if her role isn't replaced by a different one/written around entirely. How "drastically different" would the plot be if Bulma never existed and her role was taken by an entirely different female character who ends up still meeting and assisting Goku & the Z Fighters and even still becoming Vegeta's wife? The appearance of Trunks and Bra/Bulla changes, her interactions with Vegeta and the rest of the characters are slightly different, and... that's about it? Woah, that sure would be crazy to think about!
This is like arguing that "you can't think Gogeta isn't interesting besides hype because he's the one who defeats Super Broly and your favorite movie DBS Super Hero wouldn't happen since Broly would've won and that movie would've never happened if not for Gogeta!!", as if they couldn't just write Vegito to fight him instead or do literally anything else to write around Gogeta's hypothetical nonexistence to create basically the exact same outcome.
Again, it makes 0 sense to use "b-but the story/your favorite stuff wouldn't happen without !!" as some kind of defense for fictional shows, especially in a conversation all about the level of hype behind all the characters of the series and them becoming playable characters in a video game. This shouldn't even have to be explained.
