Aalu Bhindi Karahi Written Recipe :
Ingredients :
Small bhindi ½ kg
Potatoes 2
Tomatoes chopperised 3
Garlic crushed 1 tbsp
Tomato puree 2 tbsp
Dried fenugreek 1 tsp
Coriander powder 1-½ tsp
Allspice powder ½ tsp
Salt 1 tsp
Chili powder 1 tsp
Sugar 1 tsp
Onion finely sliced 1 ½ cup
Oil for frying
Method :
Heat oil in a wok, fry bhindi on medium flame for 5 mins till it gets cooked, fry the second batch of bhindi, remove and deep fry the potato fingers to a golden-brown color till it gets cooked, remove from wok. Heat ¼ cup oil in a karahi, add onion, garlic, fry till transparent, add blended tomatoes, dried fenugreek , all the dry seasonings, cook for 5 mins on low flame, add in potatoes, bhindi, stir fry for a few mins, cover and cook on low flame for 5 mins, serve with roti.
