Beef Kofta Kebabs
Ingredients:
2 lbs Ground Beef
1/2 Onion (finely minced)
4 Garlic Cloves (finely minced)
1 Bunch Of Mint (finely minced)
1 Bunch Of Parsley (finely minced)
1 Tbsp Lemon Juice
1 tsp Ground Coriander
1 tsp Ground Ginger
1 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp Allspice
1 tsp Cumin
2 tsp Paprika
1/2 tsp Cayenne
1/2 tsp Ground Green Cardamom
1 tsp Sumac (optional)
Salt and Black Pepper
Accoutrements:
Pita or Flat Bread
Sliced Onion
Sliced Cucumber
Sliced Tomato
Shredded Lettuce
Lemon Wedges
Tzatziki Sauce Ingredients :
1 Cup Yogurt
1/2 Cup Cucumber (grated)
1 Garlic Clove (minced)
1 Tbsp Mint (finely minced)
1-2 Tbsp Lemon Juice
1 Tbsp Olive Oil
Salt
Instructions:
In a large bowl combine all the tzatziki sauce ingredients and season with salt to taste. Place in the fridge until ready to serve.
In a large bowl combine the ground beef, all the dry spices, finely minced onion, garlic, mint, lemon juice, and parsley. Season with salt and pepper then mix until completely incorporated and slightly tacky.
Form a few ounces of the ground meat mixture into a oblong shape in your hand. Using a flat skewer, skewer the meat through the center and evenly spread the meat across the length of the skewer. (PRO-TIP: keep the meat cold, this will help the meat stick and stay on the skewer). Repeat with the rest of the kebabs. Place the kebabs on a sheet tray then place in the fridge to keep cold while you fire up the grill.
Next using a charcoal grill with a few wood chunks added for smoke, grill the kebabs suspended by a metal kebab holder (Check Amazon). Turn the kebobs every 30 seconds until cooked then remove from the grill. (You can also grill the kebabs directly on the grill just make sure the grill grate spacing is close together).
Serve the kofta with sliced tomatoes, red onion, cucumber, lemon wedges, lettuce, pita or flatbread, and the tzatziki sauce.
Enjoy!

As an Egyptian, I approve this recipe😋 That's good brother. Tried to put more parsley next time, you want it to look more green. It will change the game. 👌
I’ll give that a try!
Bro you deserve million views. Excellent recipe
Thanks bro
Could not find recipe, please help:)
Can anyone help how do I get the recipe
BROOOOO!!! THIS RECIPE WAS INCREDIBLE! I'm middle eastern, this is the best recipe, my family won't stop talking about these kebabs!!
Glad you liked it! I make it gluten free but it’s harder to keep on the skewer
@@MatthewAugustahow do I get this recipe?
As a fellow Egyptian, but my fellow brother, George W7405 said add more parsley. It will change the game and make it more small because in kofta it’s good to be small matter.
🙌🥂
Tried the recipe today and it smacks
Great to hear!
To help cook evenly, make thumb prints in the meat on the skewer to level out the koobideh. And baste it with butter for good crust
🥂
Looks great!!!
❤️
Damn that looks so good
Thank you!
Since I was suggested your channel yesterday, March 18, 2023, I find you to be a top chef.
I gave your channel to a few people to watch.
Awesome, thank you! Appreciate that
As an armenian you put too much spices. The onion and cilantro was good along with salt pepper and red pepper. You can mix the beef meat with sheep meat to be nice and juicy
@@haroutkhatch104as a CZcams follower of his channel like you, you can add as much or little of any ingredient that you desire🙄

Definitely need to sub out that ground beef for lamb asap if you want it to be anything like the original. Good recipe though
❤️
Looks good and plated very pretty.
Thank you. Appreciate that.
And it’s more better to serve it on a huge plate filled with parsley and instead of the dipping sauce, you add tahini instead 😊😊

Yes! These were soooo good! You did a great job!

Oh yes….❤
I’m Native American and these kabobs were so good! I filled a pita with meat, tomato, cucumber, and tzatziki sauce. Had a side of Lebanese rice. This is going on the monthly rotation!
I think humans love these kebabs

If you grate the onion and drain the juice, based with butter during cooking, you'll understand why you did
Nice tip!
As a syrian we make them like that sometimes but we mostly make it in the oven
🥂
Looks nyz❤️
Thank you
As a Jordanian I approve of this looks fucking amazing that’s for sure 🤩
Thank you! 🥂
Damn yum
🥂
Where can I get the skewers and the rack you used? Also what kind of wood chunks did you use in the grill?

I love the fact that he replies to almost all of his comments this dude is the best cooking youtuber❤
Appreciate that 🥂
I tries to make these for the first time today i now know i need to chill the meat before assembling!😂😂😂❤❤ thanks wish i saw this earlier
You got this!
U wanna make the juiciest, most yummy tasting beef or lamb kebabs? Make it with pork.
🥂
How much cumin to put on the Tzatziki sauce? You mentioned on the video but not on the written recipe. Also no mention of olive oil on the video but it’s on the recipe.
Thanks!
I’ll have to check it. You just put a few pinches
Looks Great, but I wanna know what happened to your mother? Mine died the day after my birthday in December! And watching her on Hospice is So difficult to handle to end...and I wasn't ready for her end! 😢 still cry daily 😭🥲

I believe the white sauce is usually dill, and cucumber, maybe with lemon, and some spices.
Try it

nice! where are these skewers from? would love the link please!
I believe they are on my website.
I make this a lot. I fry mine . I'm American I don't bother with how others say its not supposed to be same
🥂
To cook in the oven should I broil or bake them?
You can actually cook them like burgers if you need to
Quantity please you just pour Ingridient but I don’t understand what or how much you ar using. Thanks I like to try this recipe 👍
The recipe is on my website www.matthewaugusta.com
Delicious Beef kofta but my favorite is lamb 😋
🙌🙌🙌
No bread crumbs and no eggs? Impressed that it holds so well and doesn’t crumble
Gotta make it cold
Chilling the meat and the skewers right before grilling helped hold the meat for me
what was the skewer holder
yoou used on the grill
It’s on my website I believe
Most middle eastern folks don't use mint but use parsley..some use cilantro...but best to experiment and we dip it in tahini sauce
Sounds great!
In lebanon mint is widely used
@Helvetorment yes here in Dearborn Michigan all the Lebanese use it a lot
In India and Pakistan this is Beef Seekh kebab
🥂
Try it in kobideh kebab style ، it will melt your taste buds
Sounds good!
Every time I see a Kabob I can't understand that it's from Iran or India or Arabs or...
(Because I'm Iranian and we have different types of Kabob here)
What kind do you make?
Please try Indian food dal makkhni, maater paneer with butter naan.
I’ll add it to the list 🥂
can you link the kebab stands you used on your grill please?
Yes they are on my website. I got them on Amazon
It’s weird for me when some days cardimom. In Australian it a called cardimon
🙌🙌🙌
Step 1) always make sure you dont lose any of the onion water so it falls off
🥂
How do you prevent the meat from falling off the skewers
You can add a slice of bread soaked in milk to the meat if you are having trouble
Those long flattened bar metals are the skewers??? Wow.
Yeah you can get them online
Only north Americans use the word
" addicting " . All other English speakers would say addictive. I'm not sure addicting is even a word. Always sounds so strange to me when I hear it.
The kebabs do look very delicious 😋

🤣❤️
@@MatthewAugusta 😍😍 omg what an honour from the man himself hahaha! Thank youuu! Stay minty! 🤣
This might’ve been asked but can I substitute ground lamb?
Yes you can. That's more traditional
@@MatthewAugusta thank you. I plan on making it for my dad during Ramadan. Want to surprise him with it.

Do you use 93% lean ground beef or 73% lean ground beef ?
80/20
@@MatthewAugusta
what would happen if you were to use 93% or 73% ?
can't believe preem is a thing already
🙌
Could this be made in the oven?
You can make it into burger Pattie’s and cook in a pan or grill
@@MatthewAugustathank you
whered you get that skewer set
Check my website but it's on amazon.
Is it me or does Matthew look a lot like Dutch from Red Dead Redemption?👀
The character was started by me
@@MatthewAugusta Gg fam, what a pro gamer move :D
No, flipping every 30 seconds has nothing to do with cooking them evenly. The fat gets hot on one side and the meat slops into the grill. So you have to turn them regularly to keep the heat to the fat uniform. This allows the meat to stay on the skewers.
That’s right!
Man his wife must be so lucky✌️😁
🥂
Can you please send me the whole recipe
It’s all in the description.
Thank you 🥂
