- Today I am chicken flautas or you may call them taquitos. By the way, you may think flautas are only made with flour tortillas, but my Mexican grandmother only used corn tortillas for these. In Mexico, the word flauta is used for a crispy fried rolled taco made with corn tortillas. Whether you call them flautas, taquitos, or rolled tacos, this is gonna be good!

INGREDIENTS
1 lb cooked and shredded chicken
12 to 15 corn tortillas
salt and pepper to taste
2 Tbsp flour or corn starch (for paste)
2 1/2 Tbsp cold water (for paste)
cooking oil for frying
toppings of your choice

In Calif, taquitos are made with corn tortillas and flautas made with flour tortilla. Great tip on the corn starch binder. These work well in the air fryer too.
In the great state of Texas taquitos are made with corn tortillas and flautas are made with corn tortillas! Hundreds of thousands of Californians have moved to Texas because we are much cooler and don’t have all them stupid liberal laws!
That’s what I was explaining to my son as he’s in the kitchen preparing Taquitos not flautas. But either way the concept is the same.

Taquitos are one of my tests for a good Mexican restaurant! When I make at home I like adding a smoked cheese to the meat. Ive never shallow fried or used a paste-thank you!

Thank you! I made these with my best friend who is Mexican. I tried to do it myself and the corn tortillas fell apart. I was so mad. I forgot you had to heat the tortillas up first 😂 The flour paste worked great too 👌🏼

Okay you convinced me to make flautas tomorrow
I grew up in Southern California in the Inland Empire with tons of Mexican friends. What you made here would be called only a taquito there. A flauta there is always made with a flour tortilla and are always bigger and more loosely rolled than a taquito. After all, taquito means "little taco." I realize that probably originally with the indigenous peoples, they were likely made with corn, but should have been much larger and looser than a taquito.
