ingredients
- Oil: 3 tbsp
- Black cardamom: 2 pods
- Cinnamon stick: 1 inch
- Bay leaf: 2
- Onions: 2 medium-sized, finely sliced
- Mutton: 1 kg, cut into pieces
- Kashmiri red chili powder: 1 tbsp
- Roasted coriander powder: 1 tbsp
- Roasted cumin powder: 1 tbsp
- Paprika powder: 1 tbsp
- Salt: 1 tbsp
- Mix masala: 1 tbsp (a blend of garam masala or other preferred spice mix)
- Tomatoes: 3 medium-sized, finely chopped
- Water: as required (approx. 2-3 cups)
Instruction
1. Heat Oil: Add oil to a large saucepan and heat it over medium flame.
2. Fry Whole Spices: Add black cardamom, cinnamon stick, and bay leaf. Fry for about 1 minute until aromatic.
3. Sauté Onions: Add the finely sliced onions and fry until they turn light brown.
4. Add Mutton: Add the mutton pieces to the saucepan. Fry until the mutton turns light brown, stirring occasionally.
5. Add Spices: Add Kashmiri red chili powder, roasted coriander powder, roasted cumin powder, paprika powder, salt, and mix masala. Fry the spices for 1-3 minutes, ensuring they do not burn.
6. Cook Tomatoes: Add the chopped tomatoes to the saucepan. Fry until the tomatoes become tender and oil starts to separate from the masala.
7. Add Water: Add water to the saucepan (enough to cover the mutton) and stir well.
8. Simmer: Reduce the flame to low, cover the saucepan, and let it cook for about 1 hour or until the mutton is tender and the curry has thickened.
9. Serve: Once done, turn off the heat. Serve the mutton curry hot with rice or roti.

- پاپریکا پاؤڈر: 1 کھانے کا چمچ (पाप्रिका पाउडर: 1 टेबलस्पून)
