  • Hello There Friends, Today I'm going to show you how to make the Cheese Mornay sauce that I use for my Lasagna and my Macaroni and Cheese. Its absolutely delicious, and a must try for anyone that has never done it before. Just make sure that you use good cheese! Let me know what you think in the comments below.

    I love watching you. I am self taught, started cooking at 9..... mom had to go to NY for my uncles funeral and I cooked dinner that night.
    30 some odd years later I made a potato soup and mom said "your grandfather would be proud of you". I cried that night.... I didn't know him that well. And I had instead of putting raw bacon in, I cooked it normally then crushed it up and put it in... mom and dad loved it.

    Warm milk does make a difference. If you use cold the temperature keeps going up and down. Plus takes longer to make. Just listen to the chef he's ALWAYS right.!! 👍👍👍👍👍💕🥰

    Cheffie! What you are doing to me, you’re driving me crazy. I have a fridge full of breadcrumbs, garlic paste, chicken stock, beef stock, cottage pie, and beef casserole. My shelve space is now nonexistent with my newly purchased meat processor, food processor, scraper, whisks, and cutting boards. My pantry has truffle oil and a nutmeg grinder. I love it! Keep going! xxxx!

Chef Jean-Pierre needs a statue erected in his honor for what he is doing,It is the most sincere act of humility and kindness teaching the world classic french cooking one video at a time,I for one feel like I have found the master that I needed to learn from with his methods of cooking his cleanliness idea of bleach water his good sense of humor and his simple teaching methods he makes people feel like it is not rocket science and accessible to regular people with or with out a lot of cooking skills He gives people confidence to want to try and cook his recipes/meals and that is such a positive thing to help people grow as a person, Chef Jean -Pierre once again I tip my hat to you for being such a wonderful person doing what you are doing .you my friend are a legend ! and everyone here I ask the you all say Viva Chef Jean-Pierre ,All raise your virtual glasses in cheers and toast to an Excellent human being and thank him with all our hearts .     Thank you so much! I very much enjoy your channel. I'm probably older than you. That said, I've been cooking high end dishes since I was 16 years old - a family thing... This video reminded me of one of the better restaurant meals I used to have in college, circa 1977 or so. I could only afford it twice a month if that. It was from a restaurant called TGIF Fridays, crab and shrimp in a Mornay sauce, using mushrooms, Swiss and parmesan cheeses with a dry Sherry wine. Finished in the oven to a bubbly crust. Best I've ever had - the Sherry was what made the difference. Cost for that entree at the time? $6.95 cents! A bacon wrapped beef tenderloin in a wine and mushroom reduction was $8.95!
    Since the dish disappeared, as they stopped serving it decades ago, I was never able to track down the ingredients. It was absolutely decadent! This, until I recently found photographs of their menu from those times. The price for that meal at the time was $6.95!

    I can't thank you enough for this recipe. My wife had oral surgery yesterday and I needed to make something soft for her to eat tonight. I wandered past the fresh Italian counter at my local Kroger superstore and got some butternut squash filled ravioli. That was easy but I needed a sauce to go over it otherwise it would be very bland (blech). I decided to use this sauce. It came out perfectly. I didn't add the egg yolk (I have to watch my cholesterol), but I did add freshly grated parmigiano reggiano and mozarella to the sauce. It was absolutely amazing and very smooth/creamy. My wife and I loved it. As a professor, I appreciate teaching that explains the why as well as the how. You do that religiously. I have been learning so much since subscribing to your channel. Thanks again.

    I have made this sauce and to say it's smooth and flavorful is an understatement. The flavors I get even my neighbor who grew up a
    Velveeta Mac and Cheese fan and has exclusively eaten that for 80+ years has requested I make it again so I can share, which I always do. And now after making Lasagna my wife of 30 years has decided that I am the one cooking Lasagna with this sauce.

    White pepper has its place. It is terrific sprinkled over hot buttered popcorn and its fragrance adds much to southeast Asian food. That said, I usually always go for black pepper, even in cucina bianca. Thanks for all your great recipes 😀

      A wonderful luxurious Philly cheesesteak... you make the same way as a normal cheese steak and add some of the Mornay sauce from this video. You would simply substitute whatever cheese you normally use on your sandwich, such as provolone, with the Mornay sauce, and you add it after you put the steak on the sandwich. Just make sure your Mornay sauce is not too liquidy/runny. If you don't want a sharp, nutty, cheese such as the gruyere he's using, you can use Fontana cheese, Monterey Jack cheese, pepper jack cheese, or all three,etc. Just make sure you use a nice white cheese that melts easily.
      Remember, recipes are nothing more than a guideline. You don't have to stick to them exactly. In fact you never should, always make whatever you're cooking your own.
