actually, they serve the side dishes first.. and then comes the main dish.. normally people 'taste' side dish separately, but do not eat in big amounts. they wait until the main dish comes.. liquids like sambar, kaara kuzhambu, rasam, mor are mixed with rice.. the solids like koottu, poriyal, pachadi, aviyal, thuvaiyal are used as side dishes for each course of the main dish.. this is a very organized eating compared to other cultures.. also, you will never find sweetness mixed with salty items.. sweet is separate, salty/tangy is separate.. it is a wonderful culture of eating! starts with sambar, which is moderately spicy.. then moves to kaara kuzhambu when your taste buds are ready for strong ones... then comes rasam which is watery and pushes earlier dishes down the throat and helps in digestion.. and finally mor.. which cools off your mouth and throat getting ready for the sweets/desserts.. what brilliance from tamils!
