You need a proper drainage with bigger drainage pipe, you are on wet terrain and the soil under the building is soaked with water, I would recommend depth of drainage channel/trench 1.5m.
+1, a deeper drainage trench with a significant drainage slope could help lower the groundwater level locally around the house.

Hey guys, I am speculating from just a video, but I have some background in geology. Your house is backed up against a hill, and thus the ground water table can get high after a rain, so it’s possible the water from the hill will seep up to the ground surface. Consult a hydrologist / geologist. Potentially using wells and pumps to lower the local groundwater table around your house is an option.

こんにちはさすがに夫さんの腕前は凄いですね、いよいよこれからお家のリニューアルとても楽しみにしています。自分も田舎暮らしですが山の緑や紅葉空の青さを楽しんでいます。
作業場の二階は絶景ですね。リビングでもよさそうですが冬は寒くて大変でしょうか？ ブラタモリで絶景を望む部屋の奥座敷が高くなっている邸宅をやっていましたが、見下ろせるように意図的に段差がついている気がしました
Since you can't put a membrane under your concrete you could try a liquid epoxy damp proof membrane--basically an epoxy paint.
Such a beautiful property...

古民家のリホーム動画を見るのが好きで、いろいろなチャンネルを拝見しています。その中で、いつも気になるのは「土壁を落として、･･」や「天井を落として･･」「床板を剥がして･･」などが多いことです。まだまだしっかりした土壁や無垢材で作られた立派な天井材、床材などを壊して、石膏ボードやベニヤ材に置き換えているを見ると、残念な気持ちになります。「古くてもまだまだ利用できるものの価値が、理解できてないのかな」と、思ってしまいます（勿論、そうでなく手を加えて補修し、再利用している動画もありますが）。
そのような訳で、「古い食器箪笥を丁寧に掃除し、再利用しよう」という姿に感動しました。このような価値観をお持ちのお二人ならきっとこれからも楽しい動画を拝見させていただけるものと感じております。最後になりましたが、お二人のご健勝を願っております。
追伸；あくまでも、お二人に関係のない個人の心情ですので、お気になさらないで

あ～、コンクリの下に防湿シートを張ってないんですね
肥料袋を防湿シートの替りに敷き詰めているようですが、重なり部分にテープを貼ってないから、その重なり部分から湿気が上がってコンクリに染み出して来たんですね
湿気をあげたくなければコンクリを撤去して、施工のやり直しですね

まだ節々が痛そうですが、手直しして本来の役目で使ってあげたら家の守り神になってくれそう。

Your poor husband looked very defeated, his expression was a little bit funny though. Lol. I think you should first redo the workshop floor to see if the problem can be fixed and then redo the trench outside. Your reaction to bugs is very similar to mine, ha. I can't handle bugs either, not even ants. I'm currently dealing with an ant invasion because of the consistent lack of rain here in CA and the oppressive heat. I feel like my skin is crawling 😬. My mother, who I live with, is the one who handles those things. Lolololol, I'm 42, but I still run to my mother when I see a bug. My mom just laughs at me shakes her head. 😁
