Prices range from £218 - £290. How does this compare to the Rab Valiance, which I believe is fully waterproof?

This one is quite a bit warmer. This is enough for most water and the down is treated with water resistance so it will stay warm while wet. I would recommend the neutrino more.

Anyone know how to roll the hood properly as I can't do it right

There is a Velcro strap inside at the neck, can't find any info for it.
