    We love Coconut-Peanut Butter-Vegetable curry with cooked chickpeas, over Basmati rice. I've been buying the organic coconut milk for $1 a can from Dollar Tree whenever it is available. I start with chopped onion, carrot, and garlic sauteed in coconut oil, one can of coconut milk, Thai inspired spices, a half cup of peanut butter, cauliflower, green beans, and chickpeas. Simmered for about an hour then served over rice with a squeeze of lemon, green onion tops, and sometimes a dollop of plain greek yogurt.

    I don't want to be "that person", but had to mention your home-preserved food... It's not safe to stack them like that. =( However, you can safely stack them with the bands loose on the jars (not tight; that's a no- no too) to give a gap so there's no pressure on your lids on your canned goods. =) I learned that last year from Heidi from Rain Country homestead on youtube. I know all the work that goes into canning and would hate for you to lose your food!

    I have such a hard time prepping without waste. Under normal circumstances, we eat almost nothing packaged-all fresh meats, fruits, and veggies. I know that won’t be an option in an emergency situation, but if I buy a bunch of oats and rice and beans (which we don’t normally eat), it eventually goes to waste because we don’t have constant turnover in our pantry. But we can’t stock up on fresh stuff. I guess a freezer is our only option? That will work in a food shortage situation, but not a SHTF situation, so it still seems prudent to stock the pantry. I just don’t know how to do it without being wasteful.

    • @Thingys-Jill
      @Thingys-Jill Před 2 lety

      What you need to do is to repackage the oats and rice into sealed food safe buckets and put oxygen-eater packets in with them. They'll last a decade or two that way. Now the beans can also be repackaged and can always be planted in a garden for a crop. You could dehydrate the fresh fruit and store it the same way.

      I grew up in a large family in the country and we also always had a well-stocked pantry as well as a cellar full of root crops, ferments, juices, wines, beers, hams, sausages, cheeses, and canned foods. To me, it's NORMAL and simply WISE to have supplies stacked and ready because none of our ancestors, not us, nor our future generations know what tomorrow will bring.
      We prepare for classes, for going out, on trips, to work, for parties, being insured ... why not for the next meals till the next growing season arrives, right? It's just common sense in my humble opinion!

      I have those 6 cubby shelf units that I now put in my closet sideways and store goods in. You can also use bookcases. If you don't want to see it all, then put up tension rods and little curtains. It doesn't have to be in the kitchen. I went from an 8' x 10' pantry in my old house to a 6 inch x 30 inch 4 door pantry next to my fridge. I put stuff in the cabinet over the washing machine too. I might outfit the entry closet with 4" deep shelves for food goods and that way I'd still have room for jackets.

    Caution when storing pineapple..... the high acid content can cause cans of pineapple to go bad very easily, some times even before the expiration date. I have started storing mine inside of a plastic container just in case it should leak at least the liquid would be contained and not leak out causing damage to anything else.
