OLD FASHIONED BAKED BEANS
2 cups White Pea Beans
5 cups cold water
1 med. onion diced
1/2 tbsp salt
2 tsp cider vinegar
1 tbsp brown sugar
1/2 tsp mustard
1/4 cup molasses
1/2 cup ketchup
pinch black pepper
bacon, pork, sausage or wieners
Rinse beans and soak overnight in cold water. Drain. Add 5 cups cold water and beans in a large pot, cover, heat to boiling, then simmer 30 - 45 minutes or until tender (beans will not become any softer once placed in the oven). Drain. Place beans, onions and all remaining ingredients in an oven proof casserole dish. Stir gently to combine. Add enough water to cover mixture. Cover with lid and bake in a 250 degree F oven for 7 hours. I like to speed this up by baking at 300 degrees for 2 - 3 hours.
About half way through baking, remove 1 cup of beans, mash, then stir back into the casserole dish. Cover and continue to bake. Add water as needed to keep beans covered. 30 minutes to 1 hour before serving, remove cover to darken up the beans. Salt to taste. Serves 8.

Ahhhh baked beans. Yum. The trick to soft baked beans is to boil them first. Just boil them until they are soft and when you blow on a bean, the skin comes off..... takes about half an hour. Then add your ingredients and bake for great color and flavor. You would have to bake them for a long time before they get soft.

I have a cabin in Wisconsin, and enjoy many of the same things you do. Hunting, biking, hiking. And I fly my drone above the cabin. I always enjoy seeing what kind of meals you are whipping up? My god... the road at the beginning... it was atrocious. Perfect to destroy a suspension, even with a pick-up, unless you go slower than walking. That's a common problem with back roads in spring in Canada. BTW, your camera work is pretty good :)
I was about to say "what about molass" when I saw the pop-up :) We don't use wieners here in QC, we use lard instead. And this video shows one thing: Nothing stops a Canadian to get to his cabin!

Bob as a Canadian in northeastern BC I’m seeing some different brands of foods you are bringing to your cabin….we can get the beans and molasses just not the same brand. And the Chagga tea…..I’m now going to be looking for Chagga on my birch trees lol. Cool to see some of your recipes!

Here is an old family recipe from my nana in Wales that my mum made and I continue to make for my grandchildren. My mum called them bakestones, because they are cooked on a griddle, but they are also known as welsh cakes.
Stir together in a bowl 4 c flour, 1 tbsp baking powder, 3/4 c sugar (can use a mix of brown & white), and a pinch of salt
Cut in 1 c butter OR hard marjarine
Stir in 1 c raisins
Beat with fork 2 eggs and 1 c milk, and stir into dry ingredients
Roll out to 1/2 inch thick, cut into rounds (like a biscuit)
Bake on a griddle that is medium heat - around 350 to 375. These were made in many welsh kitchens because they had a coal stove top with no oven and they were inexpensive and filling. They can be dredged in white sugar while hot. They are like a scone, a little more dense and will keep fresh longer. Some people split them, for butter and jam, but really, they are a simple treat just as they are and that’s the way we’ve always eaten them.
I love to cook and like you in your cabin I also have a wood cookstove. We aren’t off grid, but power is not always reliable. I’m always surprised when off grid cabins don’t seem to include a wood cookstove, just the wood heater.

Our hunting cabin is pretty small. Probably 1/3 the size of yours. The fan may be good just moving a little air.

That e-bike did pretty good for having only 3 legs. You did say it was 3/4 horse right? The 4th quarter must be billy goat to navigate through that snow. You must have ice spikes tires on it. The aerial shots are amazing!! Another great video Bob! ☮️💕

I noticed you have a fan on your cook stove that operates off heat convection. I was thinking about getting one for our hunting cabin with hopes it might circulate the heat a little better. Would you recommend it?
Well yes and no. It is good for a tiny space because the CFM on it is very low, I wouldn't use it in a space much bigger than 20x20 square because it's output is very poor
I was stationed in Goose Bay Labrador in 1966/67. Had an opportunity to go fishing in Lake Minipi. Caught a Brookie that weighed 6+ pounds. Newfoundland was beautiful.
