    1. BIBEK’S FAMILY HOME
    INTERVIEWEES: Bikash, Biddhya & Narayan
    🫖TEA: Pour water, tea, masala and milk in a pot and boil well.
    🍩SEL ROTI (NEPALI DONUT): Soak the rice in water for 24 hours. Blend soaked rice, sugar & ghee. Pour dough into a bowl. Mold the donuts and place in a frying pan with oil.

    🇳🇵STEAMED MOMO: Wrap & then steam in the water for 8-10 minutes.
    🇳🇵KOTHEY MOMO: Make stuffing with ginger, garlic, chicken, cilantro, meat masala, chopped onion, chili powder, butter, oil, salt and pepper. Use dumpling wrappers. Mix together tomato, ginger, garlic, turmeric, chili, coriander, cilantro & sheeshum masala.

    3. THE GURKHA BAR & GRILL

    🇳🇵GOAT CURRY: Slice an onion. In a massive pot, add olive oil, cinnamon sticks, cloves, bay leaves, red chili peppers, cardamom, cloves & black peppercorn. Add sliced onion and ginger garlic paste. Add a mixture of seasonings, tomato sauce and water.
    🇳🇵HYAKULO: Grill over tandoor oven. Cook on a clay oven or a barbeque grill. Serve with a special chutney made with coriander, mint, Szechuan pepper, red chili pepper, and salt.
    🇳🇵HEAD & FOOT SOUP: Heat oil in a pan. Add a tablespoon of whole cumin seeds, whole red chili pepper, black pepper. Add the chopped onions & cook until golden brown, then add minced ginger & garlic. Add turmeric powder and salt. Add meat and mix. Allow it to cook for a few minutes then add water. Add cumin powder, coriander powder, garam masala, stir & let it simmer for 3-4 hours.
    🇳🇵INTESTINES: Clean the intestine. Boil the intestines and belly for at least 7 minutes and wash it again. Cut the small intestine and belly into small pieces and the liver, heart and kidney of the meat into cubes. Heat oil. Add whole cumin seeds, whole red pepper, bay leaves, cinnamon stick, star anise, green cardamom and cloves to the hot oil. Add minced ginger and garlic and sauté until golden brown. Add turmeric powder, salt and pepper. Fry the belly and intestines over medium heat. Add liver, heart and the kidney and cook for another 15-20 minutes. Garnish with chopped coriander and serve with beaten rice and tomato chutney.

    After seeing this episode last week I went to try this place out last night. The food here was awesome, I had the chili chicken for an appetizer and the curry goat for our meal, both were amazing! The young ladies taking care of us were both so nice and friendly, along with one of the owners who came over to ask how we liked it. Amazing food, great service, and atmosphere. I highly recommend this place.

      I mean people are eating selroti (they are like our national breakfast during holidays) and mo:mo and khasi(goat) head soup. These are something Nepalese people can relate very well to and bring joy seeing nepali people in abroad eating them

      Those doughnuts are made in bulk.. And you'll be eating it every morning as breakfast with tea till they run out.

      She probably has learned how over the years how not to get burnt. Takes a great deal of skill to make those doughnuts. Loved the food, looks so good.Never get up to the Dallas area, but if I should I've got to try it. And like Sonny said, food doesn't stay inside borders. Through the centuries, through migration, wars etc, different peoples and their foods have mingled with others, yet like Nepali food, they still have their own distinct flavors, ingredients etc.It's great to learn about other peoples and their cuisines.

    Been watching your show, Sonny, and I truly appreciate the way you feature the cultural context of the food you explore/discover. Happy that even as you have moved back to the USA you continue to feature diverse cuisine with interesting backstories.     I might be biased as a US viewer, but this type of content is so much better than the state fair/junk food stuff. Please continue highlighting the immigrant culture in the US. This country is actually a beautiful peaceful melting pot of cultures and we all truly love stories like this. Please don't stop, we need this.

    The goat head and trotter soup is called “paya curry”. It’s originally made with beef, but, most Hindus’ don’t consume beef.

      But Buddhist people do eat beef, and it is originally a Buddhist dish.

      @@-jank-willson in th Rig Veda (c. 1500 B.C.) it says, cow meat was consumed. Like most cattle-breeding cultures, the Vedic Indians generally ate the castrated steers, but they would eat the female of the species during rituals or when welcoming a guest or a person of high status.
      Since, all cultures have a nice story the mahabharata mentions a fable about a famine, a king, his conviction for the earth to produce nourishment, deliverance of a cow out of nowhere. #PowerOfMiracles

    Momo was inspired from tibet but its content inside was developed by "newar" one of the community of nepal which is now a national food

    I am Filipino 🇵🇭 . I love Nepalese 🇳🇵 people. Really miss my Nepalese brothers, back then in Saudi Arabia. Eating together with them mutton curry and basmate rice and cucumber in one big plate setting on the floor. 😄😄😄

    Oh yeah you finally made it to Nepalese cuisine too. You must do a tour and befrs in Nepal itself. Newari food especially has lots of variety and rice mead beer (chhyang) is also good.

    Here in Nepal sel roti is kind of a snack/side dish(some restaurants serve them on regular basis but in home usually served during festivals) . Not totally a dessert though its sweet but some may skip sugar. We serve sel roti along with various dishes like meat curry, potato salad and various other stuff. Festive is loaded with foods. So after serving sel roti, we serve rice, usually with same dishes served along sel roti accompanied by some dal or curry. Most Nepalese household will have a pan specialized for making sel roti. It has a hump in the middle which makes it easier to get circular shape.

      @@kimareska basically yes. It mainly refers to food made from batter, not particularly grounded rice batter but also various kinds of flour and other ingredients. We also refer pancakes as roti.
