I really wish manufacturers like Lexus would try to mimic the response of a mechanical throttle cable. The lag in my 2018 Lexus IS350 F-Sport is substantial (even in Sport and Sport + mode) and sometimes makes driving a little more dangerous, in my opinion. When I depress the pedal, I want to go, not wait a split second. My wife's 2016 Mazda CX5 with a mechanical cable/gas pedal feels more responsive than my IS when pulling away from a stop or accelerating to merge in heavy interstate traffic.

To my knowledge, Electronic Throttle bodies are used to improve emissions and safety features. They reduce Nitrogen Oxide emissions because of that delay in the throttle response. If you open the throttle gradually, you're gradually letting more air into the intake of the engine, thus more control over the air fuel ratio as close to 14.7:1 and keeping the NOx emissions down. Same thing goes for when you close the throttle, if you close it more slowly then you reduce CO and Hydrocarbon emissions because the air intake is reduce gradually rather than suddenly. Now in a conventional mechanical throttle, when you press the gas pedal it opens quickly, which increases the air in the intake very quickly creating a lean condition, when an engine runs lean it creates more NOx, and vice versa when you let go of the gas pedal, it close quickly cutting off air quickly creating a rich condition which increases hydrocarbons and CO emissions, because the computer of the car is still injecting the amount of fuel from when you had the throttle open. All these emissions are after the catalytic converter. Safety was another factor because you can have better control of the VSC and Traction control system with an electronic throttle body. But I do agree on your point, they are a bit laggy, but it's one of those things like hey, what can you do you know. Engineering Explained did a video comparing Electronic and Mechanical Throttle bodies, and he goes into depth so I recommend his video if you want to learn a bit more. The title of the video is "The Big Problem With Modern Manual Transmissions - Rev Hang" Although his point is different, he still thoroughly explains why modern cars have shifted from the mechanical system to the electronic system.
