Aamrakhand Recipe by Chef Amrita Raichand || Gudi Padwa Special

  • I’ve been living in Mumbai for the last 29 years and now I consider myself almost a maharashtrian! 😅 A very big festival today for all of us indeed and here’s me in my Maharashtrian Avatar, wishing all of you a very HAPPY GUDI PADWA!
    As we celebrate new beginnings with the raising of the Gudi, let’s also come together & enjoy some traditional Aamrakhand which tastes even better when paired with puris! Recipe below!
    Aamrakhand
    Serves 4 small portions
    Ingredients
    Hung curd- 1 cup( approx 500-600 of curd will give you 1 cup of hung curd)
    Mango pulp- ½ cup
    Powdered sugar - 2 tbsp
    Ripe Mango (peeled and diced) - ½ cup
    For Garnish
    Almonds (soaked, peeled & sliced)
    Pistachios (soaked, peeled & sliced)
    Mango chunks
    Method:-
    1. In a mixing bowl, add the hung curd and whisk vigorously till it gets a smooth texture.
    2. Now, add the mango pulp and whisk again till you get a homogenous mixture(same colour throughout)
    3. Add the powdered sugar and mix well.
    4. Now add the mango chunks and fold it in with the spatula.
    5. Transfer the mixture to a serving bowl and garnish with some more mango chunks (coz why not 😉) and sprinkle mixed nuts around.
    Serve chilled and dig in as is, or with some hot pooris as it makes for a heavenly combination 😋😋
