    Your starter doesn’t ever try to attack you when you leave it with the lid on tight? I learned to leave it loose or just a tea towel because it always sounded like a gun went off 🤣😭

      No sourdough attacks but yes, if the jar is not big enough, it might flow over ...

    I also never discard… just make sure I don’t have too much leftover before adding the flour and water to freshen it up 😅

    What is the color variation in the end product?

      It can be due to the different flours and moisture levels.

    You say put 1/4 cup of S.D starterin bottom of jar.
    Do I make that or can I buy ? Its confusing , i thought thats what you were making SD starter.

      If you watch many bakers, chefs, and bakeries they use metal bowls, dough hooks, spoons, ladles, spatulas, and pretty much any equipment they need along with some wood. But when I heard one professional chef explain, it doesn’t matter, I stopped worrying about it. And it hasn’t mattered.

    And, can I make SDS(Sour Dough Starter) with just Water and Flour only?

      I keep it in the fridge between bakings. You can make one from water and flour but then you will need to do some discards and feedings ~ Anja

    What a useless recipe. Only one measurement, no times it temps, licking the lid is asking for an explosion then you just say "use your favorite sourdough recipe"... Then what the hell was this supposed to be?
