Eggplant rolls with minced meat in sweet and sour sauce.

  • Eggplant stuffed with minced meat is a very tasty and satisfying dish.
    INGREDIENTS:
    Eggplants - 3 pcs.
    Ground beef - 250 grams
    Onion - 1 pc.
    Garlic - 1 clove
    Salt, black pepper, paprika, thyme - to taste
    Vegetable oil - 60 ml.
    For the sauce:
    Tomato paste - 1 tbsp.
    Boiled hot water - 1 glass
    Salt - 0.5 tsp.
    Sugar - 1 tbsp.
    Thyme - 1 tsp.
    1. Cut the eggplants into strips.
    2. Grease them on both sides with a mixture of vegetable oil and spices.
    3. Bake in an oven preheated to 180° for 10-12 minutes.
    4. Combine the minced meat with grated onion and garlic. Add salt and spices. Mix. If the minced meat is dense, add a little water.
    5. Carefully place the minced meat onto the eggplant strips. Roll into rolls and place in a baking dish. Garnish with slices of sweet pepper and tomato.
    6. Pour the sauce over the eggplants.
    7. Bake in an oven preheated to 180° for 40-45 minutes.
